Goodbye, Waterloo

On Wednesday (3 days ago), I flew out of Toronto and came back home to BC.

My last few meals in Ontario were absolutely delicious.

Good times were spent with my friends (this is Kianna, my friend from aerial silks) – and we had a great lunch at Solé Seafood Bar.

Complimentary bread, tomato and blue cheese noodles, spinach and feta flatbread – both of which I shared with my friend Lara. Kianna had the shrimp scampi.

For dessert, we had a dark chocolate tart with creme fraiche and berry coulis.

One day, I cooked Gordon Ramsay scrambled eggs, which turned out irresistibly creamy. They did take a little extra effort to make, and I prefer my spinach + cheddar eggs.

I liked my sweet potato fries, salmon, with broccoli couscous. The garlic aioli was my favourite part.

Pancakes are always a dreamy breakfast. Chopped prunes on top!

Almond Flour Pancakes

Serves 6 pancakes

INGREDIENTS

  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Cinnamon
  • 1 large egg
  • 1 tbsp melted butter or coconut oil
  • 1/2 cup water
  • 1/2 vanilla extract

INSTRUCTIONS

  1. Whisk dry ingredients together.
  2. Beat together liquid ingredients. Whisk wet into dry.
  3. Allow batter to rest for 10 minutes.
  4. Heat up pan to medium-high. Cook pancakes until tops are bubbly, edges are dry, and bottoms golden brown. Flip over and cook for another 1-2 minutes.
  5. Serve hot with butter.

12-metre Shrimp Tempuras

You guys might have figured out that I am absolutely fascinated by sea creatures. This was a photo I found (on BoredPanda, of all places) that shows a sleeping pod of sperm whales! They also happen to look, according to my roommate’s friend, like giant shrimp tempuras.

Cool facts – it is the large predator with teeth, uses echolocation, and is the second-deepest diving mammal on the planet. Males can reach up to 21 metres in length, and albino sperm whales exist! They are made of cartilage, so their “bones” bend and collapse rather than snap, when they undergo dramatic changes in pressure in their dives. It can retract its eyes and has excellent vision. Sperm whales are very difficult to investigate, because they dive for longer periods of time, and travel quickly in the deep waters. Also, the novel Moby Dick was based on a sperm whale!

On Friday, I went crazy with the food and ate until my stomach burst. During that time, I devoured an incredibly gooey, cheesy brie grilled cheese with cranberry mayonnaise on two thick slices of rye bread, plus a side of spicy Southern sweet potato soup – and followed that up with peanut butter + cheesecake ice cream at Marble Slab, topped with pretty much every topping. My cup was finished in a snap, but my friend’s became soup!

 

This Sunday is the aerials and pole showcase at my studio. I am not performing this time, but I can’t wait to see all of my friends perform.

For dinner yesterday, I made a cheesy quinoa casserole with mushrooms, zucchini, red onion, and some frozen mixed vegetables. This tasted great with cheddar on top.

 

I added extra nutritional yeast into the sauce, so it tasted so zingy and sharp in the best way.

 

Chocolatey breakfast quinoa is one of my new favourite breakfasts. I always add a sliced banana and a scoop of nut butter, and serve it with yogurt + coconut chips and a piece of baking (this was an almond flour fig cake). Minus the yogurt, this would make a wonderful vegan breakfast (as the quinoa was cooked in coconut milk).

On Sunday, I cooked a big batch of peanut stew. It is flavoured with cumin, garlic, ginger, and red onions – how can it not be good? The sauce also included peanut butter, chicken broth, cubed sweet potato and tons of spinach. It tasted wonderful on rice with crushed peanuts on top. I used chicken broth, but it can easily be replaced with vegetable broth (perhaps even water and salt?) for a tasty vegan rendition.

 

Yesterday, there was a thunderstorm and I got stuck in the rain at the bus terminal outside Conestoga Mall. Also, my roommates and I are starting the move-out process, which includes lots of sorting and throwing out.

 

Finally, my roommate’s yummy tomato, cheese, and egg omelet (above) made me want to cook some veggie eggs in the morning, too! Inspired by her, I cooked one egg with garlicky green beans and topped it with grated white cheddar, and served it with buttered pita bread and yogurt with a brownie, granola, and peanut butter. It was good!

I scoured my Recipes page and browsed through so many old posts to compile this listicle (you know, list + article).

Most of my favourite recipes are easy to make, require minimal ingredients, and are super flavourful and filling.

Personal Favourite Recipes My Blog

  1. Chocolate Banana Almond Flour Cake: rich, banana-y, with a great texture, it’s easy to see why this is one of my all-time favourites.
  2. Chickpea Blondies: I make this all the time, swapping peanut butter for almond or cashew, and the honey for maple. It always, always, turns out wonderfully.
  3. Vegan Banana Bread Buckwheat Bake: like a cake made a baby with a muffin, this breakfast cake reminds me of a modern baked oatmeal.
  4. African Peanut Stew: this recipe is why I love cumin.
  5. Peanut Butter Cookie Baked Oats: do I need to explain?
  6. Almond Flour Berry Cake: I make this all the time, changing up the fruit to match what’s in season. I’ve done it with blueberries (frozen), and even peaches and blackberries. Most of the time, I double or even triple the recipe!
  7. Baked Banana Oatmeal: it’s a classic. I often always pair this with Greek yogurt and nut butter.
  8. Paleo Coconut Flour Cake: I had a deep, dark hatred for coconut flour… until I attempted this recipe. Sweet, rich with coconut flavour, and with a spongy texture, this recipe is coconut flour perfection.
  9. Loaded Mexican Sweet Potatoes: believe me when I say that this recipe is so good, you might not even need the cheese! I’m a huge cheese lover, so that says something…
  10. 100-Calorie Chocolate Banana Cake Squares: YES. This one is in the Top 3 for sure. You would never guess that it’s made completely oil-free by swapping the butter for applesauce, and with a rich, deep chocolatey flavour, this satisfies all my dessert cravings with minimal oil and sugar. I buy extra bananas to make this. Heck, my roommates “preserve” their bananas so these cake squares can be made.
  11. Sweet Potato Tofu Hash: I am not a savoury breakfast person, but if I had to choose, this would 100% be the one.
  12. Black Bean Brownies: try it.
  13. Maple-Soy Salmon: I make this at least twice a month.
  14. Homemade Cinnamon Vanilla Almond Milk: okay, so I’ve only made this once. But it was so tasty that I don’t think I ever want to buy store-bought almond milk again.
  15. Sweet Potato Spice Muffins: I made a whole batch of these to bring to Toronto when I moved here a couple months ago. They vanished in less than a week.
  16. Spicy Butter Salmon: when my salmon isn’t marinated in maple syrup and soy sauce, this is the one. It pairs beautifully with any grain or veggie.
  17. The Best Banana Muffins: from raisins to pistachios to chocolate chips, my mom and I have done it all. It always turns out well, and is incredibly popular with friends and family.
  18. Chocolate Peanut Butter Banana Snack Bread: this recipe does require more ingredients than most, but it’s chewy, oat-y, and flavoured with just the right amount of peanut butter and cocoa powder. I love it for a quick pick-me-up snack in between during classes.
  19. Spicy Spinach Coconut Noodles: noodle lovers, this one is for you! Just save me a plate.
  20. Healthy “Costco” Blueberry Muffins: so close to the real thing, minus the diglycerides, sulphites, and all that…. whatever it is.
  21. Decadent 2-Minute Microwave Chocolate Mug Cake for One: last summer, my roommates and I made this recipe every night. The same recipe for weeks. It’s THAT good. I like mine with peanut butter… but then again, is there anything I won’t add nut butter to?
  22. Creamy Vegetable Quinoa Casserole: this is made on a weekly rotation. It’s the best meal prep!
  23. Peanut Sauce: from drizzling on tofu to a dip for fresh summer rolls, this recipe is versatile and balances all the right flavours of spice, sourness, and sweetness. I always find myself licking plates and bowls when peanut sauce is involved.
  24. Quinoa and Almond Flour Carrot Cake: this cake is truly amazing. It uses nutritious quinoa flour and a good dose of almond flour for a carrot cake with excellent flavour and health benefits. It’s one of my #1 favourite toppers for yogurt or oatmeal!

I love revisiting old posts and thinking about how my recipe preferences change over time, though the old favourites stay the same.

Hello, friends! I hope you all had the most fantastic Easter weekend. I did, especially when you consider the number of almond croissants that I devoured. You’ll see. 😉

This was my long weekend plan, most of which didn’t play out because the weather was gorgeous and I didn’t want to be cooped up in a yoga studio.

Almond croissant numero un was at Delysees, where I nibbled on a warm croissant with a dark hot chocolate.

On Sunday, I tried Russian food for the first time. This was a trout coulibiac from The Tempered Room. It was a puff pastry (similar to a wellington) filled with flaked trout, roasted kale, lentils, slices of hard-boiled egg, and quinoa. Definitely not the most authentic, but a delicious, protein-filled healthy twist to a Russian classic.

Let’s be honest, this doesn’t look the greatest. But it tasted AWESOME.

That was devoured alongside a buttery kale and sweet potato scone.

London Fog tea lattes are my favourite, and this was my first time trying the famous Sloane brand of tea. I loved this mug of tea, but thought it was similar to any old supermarket Earl Grey.

Croissant number two. Did I mention this was all in the same day? This chocolate almond croissant was flatter, denser, less flaky, and more buttery.

Another day, I enjoyed a phenomenal brunch at Barque Smokehouse, where I enjoyed cornbread topped with citrus smoked salmon, two poached eggs, and BBQ hollandaise, the crispiest roasted potatoes, and a kale salad with carrots, cabbage, and pear.

Healthy dinner at home involved cauliflower rice and zucchini/yellow zucchini shreds with gruyere cheese.

I can never make the 2 egg + 1 ripe banana pancakes successfully. They always seem to rip or break on me! Even this time, when I added a bit of rolled oats and almond meal to create sturdiness, they tore as I flipped them. Any tips?

Regardless, they tasted fantastic smeared with almond and peanut butter.

Round Two turned out better! I added a bit of quinoa flour this time. I think that contributed to the sturdiness.

Another day, I whisked up four eggs, lots of wilted spinach, and feta cheese. I made it omelette-style, then tossed it into the oven to broil and melt the cheese. This created a filling, delicious, and easy meal that I paired with yogurt and a crumbled date bar.

Saag paneer (spinach + cottage cheese) roti is probably my favourite thing about Toronto so far. This roti from Mother India on Queen West was stuffed with pureed spinach, tender potatoes, and some chunks of paneer cheese. I had a big craving for Indian food after a patient told me about Mother India, and it needed to be satisfied! I loved this roti as much as the one from Gandhi Indian Cuisine. Though Mother India’s roti itself tasted better and was less spicy, Gandhi’s saag paneer roti had bigger chunks of paneer and the spinach looked greener.

It looks gross. I know. But it tasted absolutely incredible.

Can you believe that I have EIGHT more days of work before I’m going back to Waterloo and saying goodbye to Toronto (possibly forever!)?

My sister, Seline, published a book! Her novel is called ‘Journey to Avalon‘ and details the adventures of an awkward, self-proclaimed loser who finds herself with strange powers in the Elemental Academy for the Supernaturally Gifted – and will do anything to go back to her mundane life at home.

Holy Cannoli

Mattachioni is an Italian restaurant in the Junction. I ordered this tasty pizza for one, which had the crispiest, doughiest, freshest-tasting crust I’ve had. It was topped with fresh mozzarella, stracciatella (like burrata), basil, arugula, and marinated tomato. It was a “pizza bianca”, which means that instead of tomato sauce, it was dressed with a mild white sauce.

Dessert was two pieces of this cannoli. It was my first time trying cannoli, and I’m in love. Crisp, cookie-like, with a citrusy sweet ricotta filling, these were hearty and the perfect way to end my meal.

Is this true or what?

My class schedule is out! Yay! These are my courses for the spring/summer term, which goes from May 1 to mid-August. I really like my schedule, especially the Friday 😉

I’m so excited about this roti that I can’t type anymore. Creamy, spinach-y, and loaded with flavour. Saag paneer (spinach and paneer cheese) is my all-time favourite indian dish. This was so filling and I was dying halfway through but powered through the whole thing. Worth it!

My grandma is the most thoughtful, content, candid, and funny person I know. I was lucky to FaceTime with her on Saturday afternoon.

And two quinoa flour recipes! Again, I don’t have any pictures (Best Food Blogger of 2017… I know) because I love baking after dinner. And sadly, there’s never any natural light by then!

Quinoa Flour Banana Bread

INGREDIENTS

  • 1 2/3 cups quinoa flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 tsp ground cinnamon
  • 1 large egg
  • 2 large overripe bananas
  • 1/4 cup milk
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 cup chocolate chips, optional but recommended

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Grease a loaf pan.
  2. Place all ingredients except quinoa flour in blender. Blend well.
  3. Add quinoa flour and mix to combine. Add chocolate chips. Stir.
  4. Spread batter into pan.
  5. Bake 55 minutes, or until golden brown and toothpick comes out clean.
  6. Cool and enjoy!

Healthy Quinoa Flour Carrot Cake

INGREDIENTS

  • 2 cups almond flour
  • 1 cup quinoa flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • pinch sea salt
  • 1/2 cup melted coconut oil
  • 1/2 cup honey
  • 1/4 cup maple syrup
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup grated carrots

INSTRUCTIONS

  1. Preheat oven to 325 degrees. Grease and/or line pan with coconut oil.
  2. Whisk together dry ingredients in a mixing bowl (almond flour to sea salt)
  3. Mix wet ingredients together (melted coconut oil to grated carrots). Mix until smooth.
  4. Add dry to wet, whisking after each addition.
  5. Pour batter in prepared pan, tapping on the counter to release air bubbles.
  6. Bake 35 minutes until toothpick comes out clean.
  7. Cool 20 mins. Flip over and release when cool. Cool completely before slicing.

That’s it! I have an 8-page report due TOMORROW and I’ve only written one, so I should go now!

Blog’s 3rd Birthday!

Turns out, today is my blog’s third birthday! I wish I’d remembered earlier, so I would have done something to celebrate (i.e. make a mug cake?). Regardless, I’m glad to have been blogging here for three years. I can’t believe what started as a simple oatmeal photo gallery has blossomed to become a place where I document everything from favourite recipes to my progress in aerial silks/hoop, acrobatics, and yoga. Along the way, I’ve also garnered a better understanding of who I am, what I stand for, and why I do what I love.

Grateful for all of the fabulous foodie blog friends who inspire me every day. Grateful for all of the lovely souls who comment to share positivity, encouragement, tips, and jokes. You guys always make me smile idiotically while looking at my screen. 🙂

School took me from home in BC to Waterloo, then to Toronto. Summer adventures brought me to St-Eustache, Quebec (2014) to Paris, France (2015) to Kathmandu, Nepal (2016). Everything has been such an adventure, and I’m thrilled to keep updating the blog with my explorations.


Alright! On a completely different note, I’ve been looking to get a membership for either the yoga studio, the local dance school, or both! Any thoughts?

I’ve been documenting all the restaurants I’ve been to, and the ethnic cuisine that they serve. Here are the ones I’ve hit in the 3 months of living in Toronto.

The newest addition to this list was Karelia Kitchen, a Nordic smokehouse in Roncesvalles. They serve Scandinavian brunch, specializing in Finnish food. I started with the Nordic Fog, a unique twist on the London Fog (an Earl Grey tea latte). This was made with Swedish tea, wildflower honey, and steamed milk.

YUM! My entree was incredibly flavourful, with a variety of tastes, textures, and temperatures. Plus, runny egg was involved. My favourite bites were the beet and horseradish cured gravlax. Sweet, pungent, salty, and perfectly smoky – I’d come back to buy some gravlax for myself!

Dessert was this entire slice of heirloom carrot cake, which was perfectly soft, melt-in-your mouth, and tangy from the cream cheese icing (not too sweet). I could eat this for days.

Dinner that day was simple – toast with avocado and a runny egg cooked inside a pepper and topped with a new Irish cheese that I found at the grocery store. Lighter dinner because of an unpictured delicious dessert that involved granola, muffin, nut butter, and yogurt. The best!

I am in desperate need for new shoes. These blue guys were a hand-me-down from my little sister (I know) and have been around the world and back. I wear them when I go out casually, even if there’s no running/cycling involved. Comfort comes first, right?

I’ve been loving eggs so much recently, and I have to give credit to buttered toast and that amazing Irish cheese. I feel like I can never have enough buttered toast.
