Back in BC

Hello! I just got my wisdom tooth out. It was the second tooth that I had removed. My first one came out about two years ago.

Here is a flashback to Prince Edward Island. This was my office at the University of Prince Edward Island, and the dinner that we had on our last day. Seline ate the chicken masala skillet, and I had a lovely summer salad, a piece of pan-fried Atlantic salmon, and a great bowl of chowder. Seline and I shared the cinnamon roll on a skillet, topped with vanilla ice cream, for dessert. This was a great dinner from Fishbones.

This is our bedroom and bathroom, which we will be very sad to leave. We loved living in Charlottetown, and we will miss our lovely room and washroom.

Some final moments in downtown Charlottetown, including pics from our daily walk home. I always feel so connected with the PLACES that we visit, and I don’t want to forget the little mundane details.

Before our flight, Seline and I ate sandwiches. Her sandwich, unpictured, was a pesto chicken ciabatta from Receiver Coffee. I had a turkey and harvarti sandwich on multigrain bread from Leonhard’s Restaurant and Cafe. This great sandwich was loaded with a lot of turkey, mixed greens, and mustard dressing.

We were very happy to see family when we got back home. We were also happy to go to Ikea! We love Ikea.

Arnie didn’t really miss me, but he was really cute.

For the first few days back in BC, we had plenty of errands to run. Often, I ate waffles in the morning and then we’d go to places like Home Depot.

Mom’s cooking is always a delight. The other day, she made corn on the cob with butter, sautéed garlic green beans, scrambled eggs with shrimp, and chicken thighs sautéed with mushrooms and onions.

One of my good friends from UPEI will come to Vancouver soon. We might have vegan high tea in Vancouver together.

I also had time to go skating! It was nice to be back on the ice and skate around in circles. I want to skate for the University of Waterloo varsity figure skating team in September, but I don’t have my doubles any more.

Another couple of great dinners cooked up with family:

  1. Chicken florentine rolls with asparagus, feta, spinach // roasted baby potatoes // garlic and cheddar pita // brown butter sage mushroom quinoa risotto
  2. Chicken with creamy mushroom sauce // homemade cheesy onion bread // sautéed garlic green beans // gratin dauphinoise

Chicken with Creamy Mushroom Sauce

Serves 4

INGREDIENTS

  • 3 tbsp olive oil
  • 1 tbsp butter
  • 200g button mushrooms (white), sliced
  • 1 onion, chopped finely
  • 2 garlic cloves, chopped finely
  • 1 heaping tbsp all-purpose flour
  • salt and pepper
  • 600g boneless, skinless chicken thighs, cut into 1in pieces
  • 1 1/4 cup chicken stock
  • 1 tbsp finely chopped sage
  • 3 tbsp heavy cream

DIRECTIONS

  1. Heat 1 tbsp oil and butter in large frying pan.
  2. Cook mushrooms for 5 minutes until brown.
  3. Add onion. Cook for 2-3 mins until soft.
  4. Add garlic. Cook for 1 minute.
  5. Remove vegetables from pan. Wipe pan clean with paper towels.
  6. Heat remaining 2 tbsp oil in the pan.
  7. Season flour heavily with salt and pepper. Toss chicken in flour, shaking off excess.
  8. Cook chicken for 8-10 mins, turning, until golden all over.
  9. Add stock, sage, and boil.
  10. Add mushroom mixture. Simmer 5 mins, stirring occasionally, until sauce reduces.
  11. Add cream. Cook 2-3 mins until chicken is cooked and sauce is thick and creamy.

Gratin Dauphinoise

Serves 4

INGREDIENTS

  • 1 kg Yukon Gold potatoes
  • 1 tbsp softened butter
  • 2 chopped garlic cloves
  • salt and pepper
  • 1 3/4 cups cream

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Finely slice potatoes.
  3. Rub 8×8 deep-sided ovenproof dish with butter.
  4. Spread in half the potatoes.
  5. Sprinkle with garlic. Season, and arrange potatoes nicely on top.
  6. Pour in the cream. You should just be able to see the cream coming up around the edges.
  7. Dot the top with remaining butter.
  8. Put dish on large baking sheet.
  9. Cook in centre of the oven for 1 hour, until potatoes are soft, cream has evaporated, and top is golden.
  10. Rest 10 minutes before serving.

This chocolate cake was on my to-bake list for a long time, and we finally made it! It stuck to the pan, but was still really delicious.

Paula Shoyer’s Chocolate Quinoa Cake

Serves 12

INGREDIENTS

  • 130g quinoa, 1.5 cups water (or 2 1/4 cups cooked)
  • melted coconut oil for greasing
  • 2 tbsp cocoa powder
  • 1/3 cup orange juice from 1 orange
  • 4 large eggs
  • 2 tbsp pure vanilla extract
  • 3/4 cup melted coconut oil
  • 300g sugar
  • 80g dark unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 55g bittersweet (70%) chocolate

GLAZE

  • 140g bittersweet (70%) chocolate
  • 1 tbsp oil
  • 1 tsp pure vanilla extract, careful when adding

DIRECTIONS

  1. Boil quinoa and water over medium heat.
  2. Reduce heat to low. Cover saucepan. Cook quinoa until liquid is absorbed. It should be funny cooked and not crunchy.
  3. Preheat oven to 350 degrees. Grease 12-cup Bundt pan. Sprinkle cocoa powder over the greased pan. Shake the pan to remove excess starch.
  4. Place quinoa in a blender. Add orange juice, eggs, vanilla, oil, sugar, cocoa, baking powder, and salt. Process until mixture is very smooth.
  5. Melt chocolate over a double boiled. Add chocolate to quinoa batter and process until well-mixed. Pour batter into prepared Bundt pan. Bake 50 mins, or until skewer comes out clean.
  6. Let cake cool 10 mins. Turn it out of the pan onto a wire cooling rack. Let it cool on the rack.
  7. Melt chocolate for glaze in a double boiler. Add oil and vanilla. Whisk well. Let glaze sit 5 mins. Whisk it again. Use silicone spatula to spread the glaze over the top of the cake, allowing it to drip down the sides.
  8. Serve at room temperature. Store leftovers airtight at room temperature.

One more new-ish dinner – creamy salmon pasta.

Salmon Pasta

Serves 4

INGREDIENTS

  • dried pasta
  • salt and pepper
  • 3.5 oz heavy cream
  • salmon
  • 1 tbsp chopped capers
  • zest from 1/2 lemon
  • 2 tbsp finely chopped dill
  • parmesan cheese

DIRECTIONS

  1. Fry salmon. Break into pieces.
  2. Cook pasta in large pan of salted water.
  3. Mix cream with capers, lemon zest, and dill. Season heavily.
  4. Drain pasta. Reserve 1 ladle of cooking water.
  5. Return pasta to pan with water.
  6. Toss sauce with pasta. Add shredded salmon. Stir enough to mix. Add parmesan cheese.
  7. Serve with more parmesan.

That’s pretty much it for now.

Allergic to… Spices?!

The other day, I made the tastiest snack – a thick slice of toast topped with peanut butter, caramelized nut chocolate bark, and blackberries. This was such a great snack.

Breakfast from the farmer’s market: focaccia topped with pecans and maple syrup. It’s the best yeast bread I’ve ever eaten.

More of the same stuff – toast, PB, banana, and a side of yogurt with blackberries and chocolate caramelized nut bark. Really delicious.

Dinner from Merchantman Restaurant – Seline and I enjoyed a great meal with steak and Caesar salad, with seafood linguine and sticky date pudding. I ate the entire sticky date pudding with vanilla ice cream, all by myself. It was so memorable and tasty.

I think Seline is allergic to spices?! We ate at Himalayan Cuisine, where she had the butter chicken and I ate spinach palak paneer. We shared rice and naan. Interestingly, her throat felt itchy, swollen, and there were likely no NUTS or KIWI (her normal allergens) in the food.

For dessert, I had a mug of chai and some gulab jamun. Gulab jamun, according to Wikipedia, is a “milk-solid-based South Asian sweet, originating in the Indian subcontinent, notably popular in India, Nepal, Pakistan, and Bangladesh, as well as Myanmar.”

Another day, we played board games at Small Print Board Game Cafe (we like HIVE and WORD ON THE STREET), and had dinner at Water and Prince lobster pound. I ate a lobster roll with potato salad, and Seline had a bowl of clam chowder. I also had a cup of clam chowder, and I ate both of our biscuits. For dessert, chocolate torte cheesecake. ❤

On Saturday, we watched the Young Company dance show and ate at La Sazon de Mexico. I had the green enchiladas with vegetables, rice, and refried beans. Seline ate the cheesy chicken quesadilla.

After lunch, we had Chatime bubble tea and walked around the park. We saw Victoria Park and walked into Dead Man’s Pond, a small pond rumored to be bottomless, with spooky legends surrounding its name & spotted salamanders. Interesting tale:

Apparently, Dead Man’s Pond is the gate way to the residing place of a great, but vengeful, Indian Spirit. Sometimes, the spirit would take offense at those who invaded the solitude of his pond. Rising from the deep, he would grasp all who swam in the water or even wondered close to the shore. Pulling them down to where the denizen so the deep lurked in waiting, he would steal their very souls, before spewing the body back up to act as a warning to others to stay far from the shores of the pond.

A second version deals with treasure. Seekers had determined that pirates put into shore just at the point of land that is Victoria Park, and buried their riches in the woods. Years later the site was founded, and treasure hunters began to dig a huge hole in hopes of finding the chest of gold. When they got down so deep the sky was just a pinprick above them, the side of their hole suddenly burst and water poured in the Gulf. Storytellers state that this was the curse of the pirates working to protect the treasure.

There is another version which may be a little more believable. In the early days of settlement on the Island, the Governor threw a gala New Year’s Eve ball. A woodcutter, a poor, but honest and trustworthy man, loaded his sleigh with the best burning wood and drove it to the Governor’s house to ensure the warmth for the revelers. The Governor, grateful for the thoughtfulness of the woodcutter, gave him an extra stipend of gold as an award. Unfortunately, he was murdered and robbed for this gold and his body was thrown in Dead Man’s Pond.

Dinnertime! Seline and I ate at the Lucy Maud Culinary Institute of Holland College, where we had an amuse-bouche to start. There was a sliver of scallop, cilantro, and proscuitto.

Then, we nibbled on plenty of fresh focaccia with cultured butter. For our entrees, Seline had the chicken stuffed with spinach, and potato gratin. I ate the brown butter hollandaise arctic char with crushed hazelnuts. Both entrees were superb.

For dessert, we shared the glazed chocolate cake with ice cream, coffee soil, meringue, and toffee, and a fresh strawberry shortcake.

The next day, we went up north to Rustico. For lunch, we ate at a beachside eatery called Blue Mussel Cafe, where Seline had a haddock “burger” (really, a sandwich), with roasted potatoes on the side.

I ate the creamy bubbly seafood bake – a delightful bowl of seafood tossed in a decadent butter sauce and smothered in cheese. A fresh farmer’s salad on the side, with candied pecans and beets.

For dessert, I kind of wanted the peanut butter ice cream cake, but I’m so glad I ended up choosing the chocolate potato cake. It was served warm with ice cream and whipped cream – this was so delicious.

Few more things…

And other lunches that I’ve eaten at work. Toast with PB and banana, along with yogurt, fruit, and trail mix, are my go-to’s. Another day, I ate a lobster quiche with microwaved sautéed veggies.

Two Days in Cavendish 🐟

Good afternoon! I hope you are all having a great day so far. Lots to show you today! First of all, take a look at this lovely breakfast from Leonhard’s Cafe and Restaurant. Seline and I have gone here three weeks in a row. We love their eggs benny – she gets the bacon, and I get one with guacamole and one with smoked salmon. Their bennies are served with roasted potatoes and a refreshing green salad. I always get a chai latte, and then we share a vanilla roll.

Seline and I spent Friday and Saturday in Cavendish. Cavendish is a resort area on the north shore of Prince Edward Island, in Canada, famous for beaches and cultural sites. The park’s Green Gables Heritage Place, which inspired L. M. Montgomery’s “Anne of Green Gables” novels, includes the Green Gables house and several museums.

Seline and I never “got into” the Anne novels, so we were just excited to see the amusement parks and do other fun things.

We arrived midmorning on Friday, after a 50-minute bus ride, and spent the morning at Ripley’s Believe It Or Not Museum. Some highlights:

  • a mirrored mirage
  • a mirror which was actually a WINDOW!?
  • Ellen Degeneres made of coffee beans
  • pieces of the Berlin Wall
  • statue of the reptile man
  • shrunken heads
  • wax model of the tallest person in recorded history, Robert Wadlow (reached 8 ft 11.1 in in height and weighed 490 lb (220 kg) at his death at age 22)
  • a tunnel with moving walls that made us lose our balance

After that, we ate at the Ship’s Pub and Galley. We shared a platter of cheesy garlic bread (DELICIOUS!) and a seafood flatbread with roasted potato and feta salad.

Afterwards, Seline and I visited the wax museum. There were plenty of wax figurines, including Elvis Presley, Marilyn Monroe, Shrek, Mila Kunis, Halle Berry, Celine Dion, and more.

Then, we mini-golfed. I am an awful golfer, and it took me about ten tries to putt the ball into the hole. Seline, on the other hand, attempted some shots with her eyes closed and got a hole-in-one. We spent the rest of the afternoon relaxing at Mariner’s Boardwalk, then walked down to the real Cavendish Boardwalk.

For dinner, we ate at Chez Yvonne. They serve plenty of homey cooking. We shared a bowl of seafood chowder, which was sadly heavily potato-based, a roll, and a plate of haddock and lobster sauce, with mashed potatoes, roasted veggies, and coleslaw.

For dessert, Chez Yvonne had a daily special of molten chocolate lava cake. This dessert is a dream come true, served with two silky scoops of vanilla ice cream. I loved the filling in this decadent, but simple chocolate cake.

Two completely unrelated things:

  • our motel room – Silverwood Motel, which is near Ripley’s Museum and Chez Yvonne
  • I got to see a little piece of the Titanic! For some reason, ten year-old me was morbidly obsessed with the Titanic – I just found the voyage to be so fascinating and remarkable. I was so thrilled to SEE, in PERSON, a real piece of the RMS Titanic. What an unbelievable opportunity.

On Saturday morning, I woke up earlier than Seline and went on a short walk to Avonlea Village, where I devoured a chocolate croissant-ish pastry and a big cup of chai. Avonlea Village has seven restaurants, including Piatto Pizzeria, Moo Moo Grilled Cheese, and Samuel’s Coffee Shop. I brought a strawberry-banana smoothie home to Seline.

Then, we checked out of Silverwood Motel and went back to Chez Yvonne, where Seline had their smallest breakfast, which consisted of one egg, two pieces of toast, roasted potatoes, and bacon.

We debated between the beach and the amusement park, then decided to try walking down to the beach.

Bad idea! The beach was an hour away, and people are meant to DRIVE to the beach. Walking down there was quite a challenge, especially with the humidity. We never made it to the beach, but sat in front of a very serene pond to watch the ducks, before we headed back.

The daisies were beautiful, and there was a massive stretch of flowers. Since the road was quiet, we took plenty of photos in the middle of the road.

The walk made us want to EAT! We headed to Island Favourites, where Seline ordered a small green salad with grilled chicken and balsamic vinegar. I had the Sailor’s Sampler – which was FOUR mini lobster rolls, one of each flavour. We shared the potato wedges and coleslaw on the side.

  1. Lobster with mayo, dill, chives
  2. Lobster with mayo, celery
  3. Lobster with garlic aioli, lemon
  4. Lobster with melted butter

In the afternoon, we did an ESCAPE ROOM, died in the escape room (it was hard!), and then took the bus back to Charlottetown. I slept through the entire bus ride, and before I knew it, was back in downtown C-Town.

For dinner, we ate at the Gahan House, where Seline and I shared chicken quesadillas and a bowl of chowder with focaccia. The quesadillas were served with roasted potatoes and green beans, plus salsa and sour cream. Seline loved the chicken quesadillas! We ate some COWS ice cream before walking home – I had a scoop of PB Cup and a scoop of Moo Malt.

On Sunday morning, the two of us went back downtown. We sipped on chai (me) and iced black tea (Seline) before browsing the Sunday Market and heading to Dave’s Lobster. At Dave’s, Seline ate the lobster grilled cheese, and I had a combo of the simple mayo + celery lobster roll and the melted butter + garlic lobster roll. Both were great, and served with pickles, salt and vinegar chips, and iced water.

Finally, I had another scoop of COWS! This time, Fluff ‘N’ Udder (chocolate with marshmallow and peanut butter cups) with PB Cup.

We relaxed at the boardwalk…

And did another escape room in the afternoon. Seline loves escape rooms! I think she’s addicted.

For dinner, I cooked a piece of herbed Atlantic salmon with carrots, zucchini, and broccoli. Dessert was a lovely piece of blueberry crisp, from Receiver Coffee Company, served with yogurt.

That’s pretty much it! I’m still working on figuring out my Fall 2018 schedule, but here is Seline’s. She is taking some great courses, like Mythology and Anthropology.

On an entirely different note, I’ve been eating the same ‘ole tasty meal every day here at work – toasted bread with a smothering of peanut butter and sliced banana, alongside yogurt and some kind of baked treat. I LOVE IT!

CHOWDER FRIES in C-Town

Good morning!

Food-filled post ahead, guys. First of all, my sister and I are going to Cavendish tomorrow! It’s a touristy beach town in northern Prince Edward Island. We’ll be catching a 10:30 AM bus tomorrow and arriving in just over an hour. Both of us are really looking forward to it. I’ll be sure to take lots of photos.

Yesterday, Seline and I went to the Pilot House, where she had a striploin with mushrooms and asparagus. I had the warm seafood salad, with seared Cajun-spiced haddock, salmon, trout, shrimp, and scallops on mixed greens with cucumber, tomato, and lemon. I ate this last week, and had to order the same thing again. It’s so good – especially the goat cheese. Before our entrees, Seline ate a plate of calamari, and I had a cup of seafood chowder with a buttermilk biscuit. THE. BEST.

 

For dessert, we shared a delicious cookie pie topped with two scoops of ice cream and plenty of whipped cream, chocolate sauce, and nuts. Seline is not a dessert person, but she did enjoy this.

 

Couple of other things:

  • Seline stopped coming with me to school. Now, she’s staying at home to do some other things.
  • I chose my courses, but because there’s a time conflict, two of the courses were not added. I’m keeping in touch with my advisor to figure things out.

 

Yesterday, Seline and I went to the Charlottetown Farmer’s Market. One of my favourite vendors makes incredible focaccia bread. I had the maple-pecan focaccia, and Seline enjoyed her caramelized onion focaccia. I also had a pretty good iced London Fog. We chatted in the booths and ate our focaccia. 🙂 It was a really enjoyable morning, because I only work afternoons on Wednesday.

 

This maple-pecan focaccia was unbelievably delicious. The creamy, slightly eggy (?) topping was my favourite part.

 

The next couple of photos are actually from last week, when we were ALSO at the Pilot House. Seline ate the BURGERNATOR, which was stuffed with a big beef patty, deep-fried harvarti, all the normal burger fillings, AND a generous scoop of barbecue pulled pork.

 

I had that incredible warm seafood Cajun salad. Guys… I’d marry this salad.

 

For dessert, we savoured a sticky date pudding with vanilla ice cream. Dare I say – one of the best sticky date puddings we’ve eaten so far?

 

A fun day downtown, including: playing chess at The Great George hotel, a historical building. Neither of us can play chess, so this was a disaster.

 

Confederation Landing is a couple blocks from the “main part” of downtown. Seline and I ate COWS Creamery ice cream, looked at the water, and even bought sunglasses. Mine broke, and she didn’t bring a pair.

 

Seline and I are obsessed with this bookstore in downtown Charlottetown. It’s called The Book Emporium. We go at least four nights a week, to read, chat, and look at some new books. Last week, Seline bought three books for the price of two – The Maze Runner and The Scorch Trials by James Dashner, AND the first book of the Harry Potter series.

Also, we always go to a place called Receiver Coffee Company, where Seline gets iced tea.

 

It looks like we’ve been going downtown and having fun every single day (which is true, because we have), but a large part of my time in PEI is spent at the university, where I have been working on a number of tasks. When I’m not working on UPEI-related research, I’m helping other people with miscellaneous tasks here and there. Check out my office space!

By the way, yesterday, I ate an ENTIRE BAG of that chocolate bark with caramelized nuts. It was heavenly. I just couldn’t stop!

 

Row House Lobster Company was another place that both of us were really looking forward to, and it did NOT disappoint. I had a stunning lobster gnocchi, and Seline had a lovely striploin with sauteed vegetables. We shared a chowder, as usual, and had bread pudding for dessert.

 

On Saturday, I went to the farmer’s market. The Charlottetown Farmer’s Market is in a nice building, and some vendors sell their goods outdoors.

 

I returned from the market with an array of delicious food – croissants, banana walnut bread, blueberry-lemon crumb cake, and a tasty brownie.

 

Another day, Sal and I went to Terre Rouge. This was one of my favourite restaurant experiences in Charlottetown so far – perhaps one of my top three? I had the lobster cannelloni (a word that I can never spell), and Seline ordered the creamy mac and cheese for her entree. We were given a lovely amuse-bouche: strawberry with mint and creamed goat cheese. Then, we shared a seafood chowder with a cheddar biscuit before we ate our entrees.

 

For dessert, I absolutely LOVED this miso gelato with lemon-blueberry cake, cream cheese frosting, caramel sauce, and chocolate ganache.

 

On Sunday, Seline and I did an escape room (TOTALLY a post on its own, right there). Beforehand, we had lunch at Brakish, near the water.

 

We started with a big platter of CHOWDER FRIES! You guys! This is hands-down my favourite fries dish. Ever.

Then, Seline had a grilled chicken wrap, and I ate a barbecue salmon salad with feta, blueberries, dried cranberries, and pumpkin seeds.

For dessert, I ate up their chocolate mousse with coconut whip.

 

This lovely meal was from Merchantman, where Seline ate crispy chicken tacos and fries. I had the seafood pappardelle with perfectly-seared scallops and mussels. I wish there was more parmesan on this dish, but the scallops were 10/10 perfection. Our dessert was a sticky toffee pudding, and we ordered another scoop of ice cream after.

A Week in Charlottetown, Prince Edward Island

Mom’s homemade banana muffins, to which she added chocolate chips. I wish I could eat some of these muffins – they’re my favourite.

My friend’s mother is the dean of Applied Human Sciences at the University of Prince Edward Island (I told her that I was interested in trying a research job), and she recommended that I speak to a researcher who focuses on physical activity/sedentary behaviour (main focus), food intake, health, responses to exercise, and metabolic risk. That’s why I’m here!

I volunteer an average of seven hours per day. Normally, I start at 9:00 and finish at 4:00, but have a shorter day on Wednesday and a longer day on Thursday. There will be 24 or 25 work days in total, and I will end up with approximately 170-175 volunteer hours. I have been tracking my hours on an Excel document.

 

I’ve only done a few days here so far, but I have been helping to design banners, posters, and a new website for the Active Living Lab. I am also reorganizing the informational sheets for biosafety, standard operating procedures, and emergency response plans. I will be supervising a Breast Cancer Walking Group program every Thursday evening on campus. As you can see, I have been doing a variety of different tasks, and every day is exciting because there are plenty of new things to learn and do.

In our free time, Seline and I like going to the library (I recently read The Clearing by Heather Davis, which was a beautiful tale of two lives in different points in time), walking around downtown, and enjoying the sunshine.

We had lots of COWS ice cream – here, she had the Messie Bessie and the Wowie Cowie. I can’t quite recall what was in both, though I know there were chocolate flakes, toffee, and caramel swirls involved. I had the Peanut Butter Cup-Cup, and a scoop of Moo York Cheesecake. Both were divine! Maybe one of the best ice creams I’ve ever eaten?

Seline and I joke that we’ve been in Prince Edward Island for about a week, but we can already navigate downtown Charlottetown without Google Maps. The downtown area is not as large as the downtown areas of Montreal, Vancouver, or Toronto, but has a special charm that I can’t seem to explain.

The colours here are so vibrant (these pictures are unfiltered!), and I can’t stop snapping pictures of Seline.

We stopped by the Charlottetown Visitor Centre, to take a look at things to do nearby, and Seline picked up this escape room brochure. I booked the escape room for this Sunday, so I’m looking forward to giving it a shot with Seline.

Mmmm, seafood. You guys! I’ve always wanted to come to SIMS Corner Steakhouse and Oyster Bar, and YAY, we finally did.

  • spicy and creamy seafood pappardelle for Seline (she generously donated all of her mussels to me, and they were unbelievable)
  • lobster rigatoni with garlic-herb crust for me (the massive chunks of lobster in here were top-notch)

For dessert:

  • sticky date pudding topped with a massive scoop of caramel ice cream from COWS creamery, and plenty of luscious toffee sauce

On Saturday (or was this Sunday? I have no idea because I wore the exact same outfit), we went to the Charlottetown Art Museum. There was an exhibit called Shame and Prejudice: A Story of Resilience. It was very powerful and thought-provoking.

One of my favourite exhibits was a video that showed various forms of snow, paired with a voiceover that discussed the role of these different types of snow in Indigenous culture. The museum, overall, was larger and more intriguing than we’d expected, and we liked it a lot. To enter, you can donate however much you want.

  • Me: What do you want to do for dinner today, Sal?
  • Seline: We’ve been planning to cook at home for a week already, so…
  • Me: You’re right. We should cook at home. We have some ingredients in the fridge to use up.
  • Seline: But I kind of want to eat at another restaurant.
  • Me: Me too. I know a place called RedWater Rustic Grille.
  • Seline: But shouldn’t we cook at home?
  • Me: We could, and we probably should…
  • Seline: Let’s just cook at home tomorrow.

Then we walked into RedWater Rustic Grille!

Here, Seline had a steak with garlic mashed potatoes and baked radishes, and I ate two apps instead of an entree. I had the lobster ravioli with beet pasta, and a platter of seared scallops with pancetta. Both appetizers were delicious! To follow, Seline and I shared a gorgeous chocolate torte with whipped cream, vanilla ice cream (we got two extra scoops after!), and a smear of cinnamon chocolate. We inhaled this dessert because it was truly so good – rare in my book, because most of my favourite desserts are a warm/cold combo, while this torte was served cold.

Another day, Sal and I went to Leonhard’s Cafe and Restaurant. I had a chai latte to start, and Seline ordered an iced tea. I debated between the salmon eggs benny and the guacamole eggs benny (seriously, how do you choose between smoked salmon and avocado?), but the kind waitress offered to give me one of each. Served with flavourful crispy potatoes and a fresh garden salad, I enjoyed this brunch so much. For dessert, we shared their famous vanilla roll.

  • apparently now Seline likes macarons?! I’m very confused about that.
  • I made scrambled eggs with cheddar and spinach one day, cooked in plenty of salted butter, and they were lovely!
  • homemade chai latte, which I will drink more often. I like making chai lattes at home because I can control how much milk/tea leaves/honey go in.

Last night, Sal and I went to a place called Brickhouse Kitchen & Bar, also in downtown Charlottetown. Seline ate the steak frites, which came with beautifully-flavoured Grana Padano garlic fries and chimichurri (garlic and parsley) sauce.

I had a unique dish called the seafood pot pie, which was topped with the tastiest, most comforting biscuit crust. Buried underneath? Cherry tomatoes, mushrooms, haddock, and scallops, swimming in a creamy butter sauce. This was one of my favourite meals so far.

For dessert, we shared a pecan pie. The pecan pie was topped with homemade vanilla ice cream and served with a scoop of freshly-whipped cream. Another incredible dessert.

That’s it for now! We still have plenty of places that we want to go to, and hopefully will soon be able to check ’em off our list.

Himalayan Food and Heavy Salads

Good morning, everyone! It’s a beautiful Sunday morning here in Brisbane. The weather’s been much for manageable recently. In fact:

    Eat Street Markets (about an hour from my house) sells these ridiculous-looking donut fries, and I think I need them in my life! The chocolate looks perfectly melty, malty, and I love the combination of textures here. I should start planning my trip to Eat Street just for this!
  • must keep room door open to allow air flow
  • carry sunglasses everywhere
  • I chug more water than I have ever chugged in my entire life
  • I don’t even need to warm up before exercising because I’m alreadywarm
  • I get a tiny sweat pool where I wear my glasses or sunglasses
  • I love lectures because they are in AC-ed rooms
  • my legs stick to chairs and they hurt to peel off
  • I shower twice a day
  • I use ice-cold water which is not even ice cold (like room temperature)
  • 7am is already burning
  • shopping malls are now AC heavens
  • I make my ceiling fan spin so quickly that it’s going to fall offand kill me
  • food scraps are stored in the freezer
  • I put my face in the freezer and take deep breaths
  • if you step barefoot outside, you will get cooked

Anyways, on Thursday night I went to a place called MADO Turkish Cuisine. For my main course, I was debating between the veggie casserole, the moussaka (eggplant lasagna), and the eggplant boat. I ended up with the veggie casserole, which wasn’t even a casserole – it was a veggie stew in a clay pot.

For dessert, I enjoyed the kunefe, which is a crispy, chewy, sticky, springy Turkish cheese pastry doused with rosewater syrup and topped with pistachios. A very unique dish with such bright flavours and a unique, indescribable texture. Have you tried kunefe before?

I had this image saved to my phone for a long, long time, because I’ve been planning a trip to Himalayan Cafe for a while. Everyone knows I have a bit of a Nepal/Tibetan obsession, and my infatuation with Nepali food is no exception. Needless to say, I had to make an effort to visit this beautiful place for dinner one day…

And I did! This gorgeously-decorated restaurant reminded me of traditional Nepali homes, complete with floor pillows, lanterns, papyrus menus, and small side dishes full of aromatic lentil stew and beans. One of my favourite parts of the dinner was the pan-fried Sherpa bread, which was spongy, slightly sweet, and topped with savoury tomato sauce and a little cheese.

  • 1 small bowl kidney bean stew, 1 bowl yellow lentil dahl, 1 bowl chickpeas with potatoes, few scoops jasmine rice (took the rest home), apple yogurt with chopped apple, 1 large piece Himalayan tomato paste cheese bread

I’ve been into tracking my health lately, and spent a lot of time choosing my plant on Plant Nanny (a water-drinking app to keep hydrated!) and looking at Fitbits.

Then, I bought my own Fitbit! Mine is the Alta HR (Heart Rate), in black. I’m still figuring it out and haven’t mastered the device, but it’s been a wonderful, motivating tool so far. And, of course, much better than my iPhone’s Health app. I bought it on Saturday and spent a good amount of time exploring one of my favourite parts of Brisbane, the Queen Street Mall.

My Fitbit also tracks the amount of sleep I get, including how much REM, light, and deep sleep I have. I find it pretty accurate, but I’m also one to fall asleep seconds after my head hits the pillow.

On Saturday, I visited the Davies Park Farmers Market. It is, so far, my favourite market in Brisbane. The atmosphere was peaceful and charming, the people were friendly, and there were so many stalls. The produce was very inexpensive, and I loved the diverse spread of ethnic eats.

One vendor at a beautiful shortbread cookie stall recommended the crêpes around the corner, from Pascale’s Crêpes. How could I say no to crepes?

Wow. I am so glad I went for these, because not only were they super cheap and freshly-made by Pascale on the spot, but absolutely delicious. I’m a huge fan of buckwheat crêpes because I love their rich, roasted, grainy flavour and crispy texture. The spinach, mushrooms, and cheddar cheese inside were perfect!

Moments later, I got dessert from Pascale as well. My dessert crêpe was equally delicious, and the combination of vanilla ice cream, Nutella, and sliced banana (YUM) really hit the spot.

Another day, I baked a farmer’s market almond bostock and made a spinach omelet for lunch. I’m such a fan of almond croissants that I find myself forgetting how delicious bostocks are. On a totally different note, the filter on these photos reminds me of Rachel’s photography – her food pics are always sunny and alluring.

I’ve said it many times before, but the UQ campus is just gorgeous. I’m in love with it!

In one of my courses, we spent a lab day identifying and examining different mosquitos. Being a Kinesiology (Exercise Science) major, it was a unique experience, and I definitely learned a lot.

Completely unrelated but exciting news! My sister and I will be travelling to Prince Edward Island (Canada), for the month of July 2018. I will be going there to volunteer at the University of Prince Edward Island, and we thought it would be an awesome opportunity to spend time together after she graduates from high school. Basically, it’s going to be a disastrous-hilarious Paris 2.0.

In my Health Psychology class, I’ve been looking at increasing vegetable intake for people with Chronic Kidney Disease.

I did my presentation last Wednesday, and it was probably the most scared I’ve been since arriving in Australia. I was the second person to present, and the student before me did a spectacular, entertaining, insightful presentation about the health implications of tinnitus. Before my presentation, I could feel my heart pounding! Fortunately, it went pretty well.

Delicious cauliflower rice has also been on the menu, usually alongside falafels and omelets.

The beautiful Brisbane weather has made it super easy for me to walk around, soak up the sunshine, and see new places.

A new discovery: there is a tiny takeaway cafe in Brisbane’s Fortitude Valley region called Botanica Real Food. They serve freshly-made salads, up to FIVE types in a medium container. The ladies there really pack it in, so this full-course-meal salad weighed a solid kilogram.

Yesterday’s salad box was almost the same, with the addition of some cabbage and a freekeh and eggplant pilaf.

Another quiche! I am in love with quiche. Their crust has an amazing whole-grain flavour. I also ate the tastiest chocolate hazelnut dessert from Le Bon Choix, which I bought on my walk home.
