High Tea, MOVING ACROSS CANADA, and More

I haven’t posted for a long time… I know. It’s because the past couple of weeks have been absolutely hectic, between meeting people, moving back to Ontario, and starting classes again.

TLDR of what I’ve been doing recently:

  1. Constructing Ikea furniture very slowly
  2. Reading
  3. Meeting up with friends, like the time I had high tea with my friend Adele in Kitsilano
  4. Other random stuff?

 

Here are more tidbits of the summer. These things happened after my sister and I came back from Charlottetown, PEI, and shortly after I got my wisdom teeth removed. Some bits of the summer include:

  • going for brunch with family at Café la Foret
  • baked a super creamy, rich New York cheesecake using an Allrecipes recipe
  • plenty of delicious Mom-cooked dinners, including tofu, veggies, and more
  • making iron-on bead magnets with my sister

 

  • delicious cooking from Mom – this time with Korean beef stew, pearl meatballs, and butter chicken with mushrooms
  • walking the dog with Mom
  • baking blueberry almond bread with mom
  • delicious brown sugar waffles with powdered sugar, butter, Nutella, maple syrup
  • stewed eggplant with ground pork on rice
  • lovely soft serve from Soft Peaks, which recently opened near my grandparents’ apartment in Burnaby
  • taro and chicken stew with fried egg and zucchini

 

My grandma found these! I wrote them when I was in the tenth grade, about five years ago. This is when I wrote down everything that I ate, separating them into pages by meal (breakfast, lunch, dinner). I think it’s funny because I also RANKED all of the things I ate out of 10, then calculated the weekly and monthly averages.

 

Heirloom Vegetarian is a lovely brunch spot in Vancouver. I went with my family, and I enjoyed a great platter of mushroom hash topped with poached egg and tofu. Mom and I shared two dishes – the other one was a grilled cheese with cauliflower soup. Afterwards, Mom, Dad, and I (sans Seline) shared a tray of four ice creams from Rain or Shine. They were Salted Caramel, Vanilla, Malted Chocolate Honeycomb, Peanut Butter.

 

Another afternoon, Seline and I had high tea with our good friend Adele. It was my first time having high tea, and it was such an enjoyable experience. The place was beautiful, the food was divine, and the company was great.

 

I had two large mugs of London Fog, which Seline drizzled with honey. I ate the vegetarian Grande Adventure, and my favourite savoury bite was the cheese sandwich with apple relish, followed by a tiny sandwich filled with curried egg salad.

 

That same evening, we packed up the car and drove to Aunt Mimi’s home. We went to Mimi’s house because she lives closer to the airport, and she was the one giving us a ride to the airport the next day. This time, Dad, Seline, Grandpa, and I ALL went to Waterloo together.

Our first meal in Waterloo was Famoso Pizzeria. I had my favourite, which had arugula, gorgonzola, dates, honey, brussels sprouts, and proscuitto. On the side, a Caprese salad.

For the first few nights, we stayed at a lovely AirBnB in Kitchener. The highlight was playing a board game called Blokus.

 

Another day, we dined at Red House. Seline had lamb spaghetti, and I thoroughly enjoyed my summery salad and plantains with queso fresco. For dessert, I had the chocolate tart with whipped ricotta and berries. We did an escape room after this dinner – it was called the Vault. Unfortunately, we didn’t escape in time.

 

Around this time, we got to see the new house. The house was already furnished for one person.

 

We went to the MUSEUM in Kitchener one day, and Seline and I played with this interactive virtual dancing thing.

 

 

Fun moments – delicious dinner of baked cheesy tortellini with veggies from Ennio’s, followed by an incredible dark rum and mascarpone bread pudding with ice cream and Nutella sauce.

Plus cleaning and sleeping on the ground. Which are not fun.

More cleaning, more furniture to construct, and a random waffle topped with whipped peanut butter, honey-roasted granola, and peaches.

 

A couple wonderful meals from Dad and Grandpa’s LAST DAY in Waterloo:

  • L: Timeless London Fog, omelet with roasted cauliflower, black beans, smoked salmon, chipotle lime goat cheese, sweet potato pancake with black beans
  • D: Belmont vegetable crepe with ratatouille filling (eggplant, onion, mushrooms, zucchini, yellow squash), goat cheese, kale, buckwheat crepe // salted caramel brownie with vanilla creme anglaise, strawberry ice cream, strawberries, gluten-free carrot cake with blueberries, whipped cream, orange glaze

 

Seline and I had a bit more cleaning to do, and we were all done with the apartment. Here it is:

 

We finished cleaning, had an EXCELLENT first day of school (with yummy lunch eaten in the sun), and I celebrated with a giant chocolate chip cookie. I actually got this massive chewy cookie from Proof Kitchen for free as part of my lunch (how sweet is that deal?!), and it was delicious after popping it into the microwave for about 35 secs. Chewy, crisp around the edges, buttery, and exploding with chocolate. Served with a glass of milk.

Lately: A Lotta Brunch!

Good morning! Today is Monday, May 7 – Labour Day in Australia. Since it’s a university holiday, I don’t have classes today. Normally I have two classes and a tutorial on Mondays, which would go from noon to around 5:00. So, I’m glad that the entire day is mine to relax, catch up, and sit at home. It also happens to be rainy today, so I’m glad that I don’t have to catch the bus or walk to school with an umbrella.

Over the weekend, I went to Dymocks, the Australian version of Coles/Chapters/Indigo/Barnes&Noble. It’s a lovely bookstore in the heart of the city, and I picked up a book called Small Spaces by Sarah Epstein. I was immediately captivated by the synopsis, which I’ll paste below. I thought I’d flip through the beginning of the book, and it was so fascinating that I sat on the ground and read it until a bookstore employee told me to go sit in the back. So I did… and devoured the whole book!

I don’t have enough good things to say about it. I’ve always been a fan of psychological thrillers that are more creepy than gory, diverse characters, lots of action, suspense, and plot twists. This one checked all the boxes, and I would highly recommend it. Truly a remarkable novel – I can’t believe it’s her debut – that I’m probably going to purchase next time I go to Dymocks. Since it’s an Australian book (author is currently in Melbourne, and note the spelling of words like ‘traumatised’ and ‘realises’ below), I doubt I’ll be able to find it in Canada later on.

Here’s the summary, which I pasted from Goodreads. Interesting in a haunting, thought-provoking way, right?!

We don’t pick and choose what to be afraid of. Our fears pick us.

Tash Carmody has been traumatised since childhood, when she witnessed her gruesome imaginary friend Sparrow lure young Mallory Fisher away from a carnival. At the time nobody believed Tash, and she has since come to accept that Sparrow wasn’t real. Now fifteen and mute, Mallory’s never spoken about the week she went missing.

As disturbing memories resurface, Tash starts to see Sparrow again. And she realises Mallory is the key to unlocking the truth about a dark secret connecting them. Does Sparrow exist after all? Or is Tash more dangerous to others than she thinks?

I need to recommend it one more time – if you’re a reluctant reader who loves action and intense scenes/dialogue, this book is the way to go. Check out the author’s website, too! It’s beautifully-designed.

Speaking of books, my sister is rereading the Red Queen series. She’s jotting down all the new-to-her vocab words to define and incorporate into her vocabulary. This will be super helpful for her English provincial exam, which is coming up. Go Seline!

Switching gears…

Brunch with my friend, Grace! Grace and I travelled to Byron Bay for a weekend getaway together, and we reunited at She Bangs Coffee for a lovely brunch. I had the Italian smoked salmon with poached eggs on a beet puree, with dill cream cheese. The eggs were poached perfectly, and I loved all the sharp, tangy flavours from the red onions to the fresh cucumber. The salmon, however, was a little too salty for my taste. I loved the chai latte that I enjoyed before the meal, which was heavily vanilla-scented.

Afterwards, I headed up to the Albion Peace Centre for Brisbane’s Urban Yogi Retreat! Yes, after a very long time of not doing yoga… I did yoga. The event, which I discovered on Facebook, was promoted as “the perfect time out – stress, anxiety and worry melt away and leave you feeling uplifted and rejuvenated and ready to face the world again in just a few hours”. The retreat was suitable for all levels of experience, from the first timer to the seasoned yoga practitioner.

The program was from 11:00 to 3:00, and during that time, we did the following activities.

  • Pranayama: yoga breathing
  • Yoga asana (posture) class
  • Plant-based cooking class, where we learned to make tahini rice balls
  • Plant-based lunch of tofu, cucumber, red peppers, Thai noodles, and soy dressing, plus two spring rolls
  • Introduction to meditation class, with chanting (yoga chanting meditation is called Kirtan)
  • A discussion about yoga philosophy and yoga wisdom
  • Yoga nidra (yogic “sleep”, for full-body relaxation)
  • Tea and the best peanut butter brownies I’ve ever eaten! I asked Yasmin for the recipe, and can’t wait to make them myself.

The food was simply amazing, and the people were so kind. One of my favourite parts of the day was sitting in the grass outside the Albion Peace Centre, barefoot, with the sunshine streaming through the leaves of the trees above us. The four hours went by quickly, and I left feeling emotionally cleansed and ready to get back to schoolwork.

Another day, I had a remarkable brunch by myself. I started with the large chai latte at Corner Store Cafe before diving into this polenta and jalapeño waffle topped with creamed corn, sour cream, poached eggs, and smoked salmon. I’d eyed this on the menu for ages, and it certainly lived up to expectations. Delicious!

Since I had aerial silks practice yesterday, I had an energizing breakfast at home. I had half of a quiche made with pumpkin, spinach, and parmesan, some yogurt topped with cinnamon, and the bottom of a pistachio-raspberry muffin.

After practice, I walked around the area and found a place called Little Loco Cafe. I’ve always wanted to try their – you guessed it – chai latte, so I stopped in for a sip. This was great!

Meanwhile in Canada, Mom was cooking dinner. She made mussels with spaghetti in a spicy basil tomato sauce, topped with parmesan cheese. Her cooking is always so inventive and tasty-looking.

I asked Seline the same question, and she picked American, Japanese, Vietnamese, Greek and Italian.

That afternoon, I also did a survey for the University of Waterloo’s Food Services. This was one of the questions. How, how on Earth, am I supposed to choose only five of my favourite? Only five cuisines?! I ended up choosing French, Indian, Japanese, Lebanese, and Thai. French because I genuinely love the quality/freshness and richness of French cooking, Japanese for the incredible seafood, Lebanese because I’m a huge fan of garlic, onions, eggplant, and saffron, Indian for and Thai because

If you had to pick five, what would you select?

Last but not least, this is a restaurant that I really want to go to! My Brisbane list of cafes and restaurants continues to grow and grow. If you were to order from this menu by Merriweather Cafe, what would you select?

I would probably get the freshly-baked sourdough topped with avocado, poached eggs, beet hummus, dukkah, and add smoked salmon and halloumi to it. Or – how delicious does a free-range eggs benny with truffle hollandaise sound?! From the brunch menu, the quinoa fritter on a brioche burger looks awesome! I would also order a hot chocolate, a chai latte, or their banana, honey, cacao smoothie (and add peanut butter).

Last but not least, podcasts! I’ve downloaded the bolded ones and have listened to a few. It’s a little daunting to have so much information at my fingertips.

The Longest Essay I’ve Ever Written

Good morning! I hope you had a fantastic weekend and feel rejuvenated for the week ahead.

I had a wonderful weekend, full of aerials, where I started working on something new (to me) – a splits balance. The studio that I train at on the weekend, Vulcana, is beautiful and home to some very kind souls.

Last night, my housemate Jessica very generously donated some backpacks to me! I adore backpacks of all shapes and colours and sizes, and was so thrilled to get some new ones. My old grey one is pretty boring, and I’ve used it for over two years, so I’m excited to start using these new-to-me treasures.

Also in my life recently:

  • using my Staedler pens to write notes all the time – they make my notes so colourful and enticing. I almost want to study when these pens are hanging out on my desk.
  • thinking about starting up running! I love walking, but it isn’t a ‘challenge’ any more. Would be fun to do a bit of running before the weather gets too cool.
  • map of Brisbane and all the suburbs! My favourite suburbs are Fortitude Valley and New Farm, which is where my aerials training studios are – and home to my favourite farmers markets!
  • giant mosquito. Whoa.
  • it’s been a while since I’ve had a good old smoothie! This one was made with banana, chocolate, almond milk, and cinnamon. It was delicious on a hot day, before I ordered a lovely brunch dish of cabbage pancake topped with goat cheese, poached egg, roasted broccoli, and parmesan (unpictured).

This is the Brisbane City botanical garden. It was my first time visiting this particular botanical garden – I’ve been to two others in the area. Although this didn’t have as much plantlife as the other two, I enjoyed the lush green grass and simple ponds.

On a different note, my shoes are finally comfortable! I had some issues with my toe, and after wearing comfortable (read: ugly) shoes for a few months, giving my toe time to heal, I can finally wear my slightly-less-comfortable (but much cuter) shoes. I love this pair and glad that I’m able to walk around in them, completely pain-free!

I saw this online and it really got me thinking. What do I want to do in the future – and is it something I love? Will it be something I’m good at? Is it something the world needs? I’m going to keep thinking about this, and perhaps one day, pen in some of my career choices and see which ones fall into the centre.

IKIGAI

This was the longest essay I’ve written in my life! It is a research essay about kidney disease in Queensland, and potential health-enhancing behaviours that may improve the mortality/morbidity of chronic kidney disease. It took me a little over a month to complete, so I was very satisfied to finally submit it last week.

Essays were also involved in my biology class. We worked in groups of six, and I thought we did a fantastic job together. I was super pleased with how our report turned out, and how we collaborated.

Finally, a lovely salad with some vegetable tarts. One tart is broccoli-parmesan, the other mushroom and pesto. I loved both, especially with this glorious colourful salad.

Last but not least, I finished my box of chai – which means I had 25 chai tea bags in less than a month. Definitely obsessed with that stuff. It’s just perfect with milk and honey.

Of course, I had to make a list of chai to try (I’m sure there’s some pun I can make with this). I hope I can find some of these here in Brisbane!

Menus and Stuff

Good Monday morning, everyone ❤ Last week was one busy week, and this week will be equally packed with classes, presentations, and more. Here’s what I ate recently.

Omelet with peppers, asparagus, tomato, Provolone cheese (a new favourite).

Dinner at Fogata Latin Cuisine. I don’t always get appetizers, but when I do, it’s cheese bread. Brazilian cheese puffs are a little chewy like mochi, with a springy texture and good savouriness from the cheddar.

  • 6 pieces Brazilian cheese bread
  • 1 stuffed pepper with couscous and pulled pork, cassava puree, parsnip chips, radishes and sprouts
  • Pavé (large Brazilian tiramisu cake) with caramel sauce, cookies and cream ice cream, whipped cream (uncomfortably full after this big meal, not happy and not confident. Ice cream was good portion but dessert cake was just too large.)

Another day, another omelet, this time served with cauliflower rice and spinach.

Working at the library on an early Monday morning 🙂

I found myself in a post by the University of Waterloo for International Women’s Day! This was pretty cool.

Life around campus at the University of Queensland. One day, I am definitely going to try one of their famed pizzas. The one I want to try is the vegetarian four seasons, which means the four quarters of the pizza have different toppings. It sounds so good!

I went to the Milton Farmer’s Market on one Sunday morning. It was truly a beautiful day. Next time I go to the market, I want to try the mini Dutch pancakes. There was also a mushroom vendor who was cooking up some mushroom dishes, and it smelled divine!

I’m still in love with cauliflower rice, veggies, and halloumi. I decided not to buy halloumi yesterday, though, considering I’d been chomping on halloumi like a fiend for the last month.

Another day, I had yogurt with raspberries and macadamia nuts (roasted with honey), plus chocolate coconut roughs. This was following a great lunch of cauliflower rice with spinach, topped with carrot pancakes.

Menus for places that I want to go! Okay, I did go to Fogata Latin Cuisine already. But next on my list are Mu’ooz, an Eritrean restaurant, and Abode Cafe, which is famous for their ham and cheese toastie (The Dulcie). Golden sourdough, mango sauce, Gruyère – this sounds incredible.

Another day, I picked up some tarts from the farmers market and devoured them alongside a veggie mix. This was so, so good. I love Portuguese tarts and the flakiness of their crust; plus, these fillings were so fresh. They went perfectly with the simple veggies.

  • 1 Portuguese chicken and herb pastry, 1 Portuguese goat cheese, walnut and honey pastry, cauliflower and broccoli rice, saffron rice, zucchini, carrots, tomato, red pepper, Manchego cheese

I’ve been experimenting with different filters. They all take on a slightly different look depending on how much light is coming into my room, depending on the time of day. Which one is best?

One assignment that I am working on is about pureed vegetables in baked goods, as an increased veggie intake, among other things, will improve the health of people with chronic kidney disease (hence the kidneys in the background). This is for my health psychology class, where we look at various theories for health interventions.

Last but not least, my weekend plans. I ended up taking a long walk instead of going to Perrin Park’s fitness program, and skipping a few bakeries on Sunday because I purchased way too many at Chouquette (ate them all yesterday without taking pics!). On the right? One of my sister’s best roasts. She always cracks me up. Another 99 days until I reunite with my favourite loser.

That’s pretty much… it… for today. I wish I had something better, cooler, more exciting. But I don’t. Have a beautiful week ✌️

Lately | March

I’ve been having such a busy week, full of classes and yoga and other fun activities in and around campus. Hence the shortest post I’ve ever written and a flashback repost.

So, finally, some original content whisked together in more than a few minutes. For breakfast this morning, I had two scrambled eggs, bulked up with sauteed zucchini, mushrooms, tomato, and eggplant. Topping of Gruyere cheese, one of my favourites.

After the eggs, I had yogurt with raspberries and honey-roasted cashews. I’m getting really into roasted nuts recently (I’ve always been a nut butter fanatic), and the crunch is everything!

Another day: sliced chicken thigh with cauliflower rice and veggies.

YUM! This looks like a mess, but it’s cauliflower rice with steamed squash, sliced chicken, and Asiago cheese. Asiago is another one of my favourites, for its sharp flavour and meltability. Is that a word?

As usual, dessert featuring Greek yogurt, honey-roasted cashews, plenty of blueberries, and a few squares of chocolate.

Last night, my housemate Jessica left some carrot patties for me. Her mom, my landlord, lives upstairs and made these tasty bites. I need a recipe for these, stat! They were perfectly sweet from the carrots, tender, with a blast of flavour from the green onions. I loved them!

On a completely different note, I’ve told myself for weeks months that I’m going to make ratatouille. I just keep procrastinating because it seems like a lot of effort. I will, I will, I will. Next time. 😉

We had a few sunny, but not too hot, days in Brisbane. One of those days, I walked home from campus. It’s normally a 40-minute walk, but I was wandering pretty slowly and it took me around an hour.

More cauliflower rice, more squash, and more halloumi. I think I have some kind of obsession with halloumi. I’ve been eating it daily, and I don’t think I will ever get sick of it.

This was definitely one of my most memorable meals – wholemeal bun, sliced and topped with the creamiest Brie I’ve ever encountered, plus deli turkey and sliced pear. The combination of turkey, Brie, and pear is divine. Perhaps my favourite sandwich trio of all time?

I know, more halloumi. I should stop taking pictures of it every day because it’s always the same! Dessert was a little different: yogurt with blueberries and a crumbled LARABAR.

After two decades, my clumsy fingers finally figured out how to braid my hair in a pseudo-French braid. This was definitely the success of the week 🙂 Also, some scrambled eggs with veggies and cheese, alongside leftover garlic naan bread, before yoga one morning.

Surprise – halloumi on cauliflower rice with squash and a fried egg. What a novelty. 😉 Dessert today involved a crushed peanut butter LARABAR, a way-too-expensive chopped garnet plum, and some milk chocolate.

One Thursday evening, I was tired, outside, hot, and too lazy to cook. I ended up going to Sushi Kiyo, where I ate seven plates of sushi. Each plate of sushi here is $2.50 and has a few pieces, so I had a little of everything. Plus dessert – a great piece of tiramisu that I’m still reminiscing.

  • 4 tuna aburi, 2 salmon aburi, 2 spicy salmon aburi, 2 hotate aburi, 2 king fish aburi, 2 pieces Spider Roll
  • 1 tiramisu cake

This was one of the best evenings ever – my housemate recommended taking a walk down the Brisbane river. There was a gorgeous pedestrian pathway, and it wasn’t too hot as the sun had started to set. The panorama photos are my favourite.

Every Sunday, I take an aerials class with Ben, an experienced straps artist and handbalancer. He inspires me so much, and I love how patient he is when I ask, for the millionth time, how to wrap my wrists. We are working on a back balance here.

Organic chicken thigh with taleggio polenta, prosciutto, creamed leeks, roasted garlic crumb. Does this need further explanation?! It was freaking delicious and definitely worth the 50-minute wait.

Dark chocolate tart with caramel ice cream, dates, creme fraiche. Better than I could’ve imagined. This may be one of the top five desserts I’ve ever eaten in my life. The pureed dates, rich caramel ice cream, and slightly sour creme fraiche paired beautifully with the caramel smear, crispy pearls, and decadent chocolate. I would go back to HARVEY’s in a heartbeat for this dessert.

Yoga! This reminds me that I haven’t posted on my yoga page for a pretty long time. But I’ve been getting back into yoga, mostly yin yoga, which is relaxing and restorative. I’m also heavily contemplating a new yoga mat, but these are just out of budget at the moment. My current mat was a $4 one from KMart, and it’s been serving me well in most classes – until I sweat and start slipping everywhere.

Finally, a mash of random veggies and chicken… and desserts galore. It doesn’t look like much, but it was awesome:

  • 1/4 peanut butter chocolate cheesecake (another one of my Top 5 desserts of all time! This had the richest chocolate peanut butter ganache to ever hit my taste buds.)
  • 1/4 strawberry hazelnut baked donut (vegan and gluten-free, but I would never be able to tell!)
  • 1/4 carrot cake loaf with cream cheese frosting (loved the citrus kick in the cream cheese frosting)

Finally, Indian food. Cassie (love the new blog look, by the way!), how lucky am I to have an incredible, inexpensive, Indian food place directly downstairs of my building?! They serve plenty of gluten-free and vegan options as well, and never cook with preservatives or MSG. I’ve lived in Brisbane for about a month, and have visited A Night in India three times. Each time, I order a large serving of the palak paneer, saffron rice, and garlic and cheese naan. It’s to die for. Seriously. I’d die for this spinach curry.

On a different note, I found this online (Facebook?) and it made me think. Sometimes, I don’t feel physical hunger in my stomach, but feel weak and need a blast of energy. I’d love to see some scientific studies done on hunger cues and hormones.

Last Week in Scarborough | End of Term Things

I saw this while looking for more information about the MCAT (Medical College Admissions Test), and it was interesting to observe how students in the humanities and mathematics scored higher than those in programs such as life science and biology.

This week has been absolutely freezing. It was about -20 degrees yesterday, which isn’t terrible without the wind. I’m so glad that I purchased a good, warm, fuzzy scarf earlier in the term!

The gym at Centennial College is lovely. It is not exceptionally big, but it’s quite homey and the people are so wonderful. I love the staff here!

I have been experimenting with different mat exercises and stretches, but have yet to find a routine.

Other things from lately (L to R):

  • doggie Arnold back home in BC is doing great! I get to see him TOMORROW 🙂
  • I haven’t had access to a blender for a while, so I can’t wait to make all kinds of creamy blended soups
  • this is the Kaplan MCAT study set that my parents purchased for me. It arrived so quickly and I’m looking forward to flipping through and creating a study schedule
  • McDonalds now offers parmesan and garlic fries!
  • excellent list of more powerful words to use in writing
  • kind comment from Mom on my previous post
  • love it when people make recipes that I’ve shared! I must say that her tomato scrambled eggs look much better than mine

It snowed on Monday, and I think it’s all here to stay.

Last few photos of my room because I peace out of Scarborough. One. More. Sleep. Until I’m back home in BC. My space isn’t normally this clean – it’s an illusion because some inspectors came to see the basement. 😉

I’m in the process of planning and enrolling myself in classes for the winter term, when I’ll be studying at the University of Queensland in Brisbane, Australia.

Yesterday, my coworker and I went out for Korean food with two of our wonderful massage therapy students. We had a delicious meal – it’s been a while since I’ve had Korean food, and I loved how flavourful it was.

  • vegetable sesame noodles
  • cucumber and seaweed salad
  • sweet and spicy rice cakes
  • marinated eggplant

For my own dish, I had the chicken teriyaki with rice. Purple rice is one of my favourites.

What a memorable, delicious meal to end the week.
