Double Chocolate Beet Brownies

No pictures because I was too busy shoving these decadent chocolate squares into my mouth. Sorry – but enjoy!

Double Chocolate Beet Brownies {Grain Free, Gluten Free}


  • 4 large eggs
  • 1/3 cup avocado oil
  • 1 tsp vanilla extract (I omitted since I ran out)
  • 2/3 cup maple syrup
  • 1 1/2 cups beet puree (I used 4-5 large beets)
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips


1. Preheat oven 350 F.

2. Combine first 6 ingredients in the order listed.

3. In a separate bowl combine dry ingredients.

4. Combine wet and dry ingredients and mix well.

5. Grease an 8 X 8 pan and pour batter into the pan.

6. Bake for 45 minutes or until toothpick comes out clean.

  1. Hehehehe, I totally feel ya on loving your recipes so much that you can’t even take a picture of them. You’d need to put your camera in your stomach…..but that would definitely NOT be attractive! πŸ˜„ Would LOVE to try baking these brownies someday! They sound beyond lovely!

  2. It does sound like you enjoyed them, but if you expect me to add a root vegetable (shudders) to a deliciously decadent and chocolatey brownie recipe, you MUST have pictures. πŸ™‚

      1. LOL … good suggestion. I used beet root puree in some pasta I made a while ago and it didn’t really taste different from regular pasta so I don’t know why the idea of adding it to brownies is off-putting. It just is. 😦
