What I Ate Wednesday

Woke up to a rainy, rainy day. So glad I have nice rainboots to keep my feet dry and warm while walking to the bus stop at eight in the morning!

Before I left, though, I had a massive bowl of oatmeal made with a whole mashed banana. I love, love, love oats made with an entire banana! They become so creamy and sweet.

The weather was miserable.

I came home after my first class ended at 10:00, did some studying, and started making lunch.

I enjoyed some broccoli-cheddar soup while making this, then had some pumpkin pie afterwards for something sweet. This sandwich had TONS of zucchini, cheese, and avocado inside and was incredibly filling! That’s an end piece by the way – I inverted it πŸ˜‰

Check this out! This hallway in one building at my school is made entirely of glass whiteboard material so students can draw all over it. Isn’t that great? I’ll have to bring some markers to school one day to try this out!

I studied with a group of friends, then with another friend to prepare for tomorrow’s midterm before coming home at around 7:00 to make dinner. Roasted cauliflower cooked in the oven while I made Thai green curry with fish and vegetables. Lots of quinoa was devoured, too.

I’m in love with anything coconutty or drizzled with lime!

Oh, and I enjoyed another slice of pumpkin pie after this. Having that pie in the fridge is dangerous for me because I’m always tempted to snab a piece. :/

PS: I’m still fiddling with my camera trying to figure out why the memory space is all full. I’m terrible with technology!Β Do you ever have problems with computers, phones, or cameras?

  1. Wow! You always eat so healthy. I love avocados too, and it makes the food more colourful and tasty.
    I have never cooked quinoa since you left BC. Maybe I should cook some. I cook more Chinese food now. We sometimes have pasta too, but not often. Can’t wait you come home on Christmas .

  2. I made the mistake of going to Cost Plus and didn’t just go in and get what I needed…they have my favorite gingerbread soft cookies from Germany…they are only 100 calorie each but I ate way to many…rest of day okay….your sandwich looked so yummy……kat

  3. Tis the season for pumpkin pie!
    You make me want to make more sandwiches! Yours always look amazing! And of course I use the end pieces- I can’t believe I didn’t as a kid. I will be inverted them for my kiddos one day.
    And the fact that it is 8 degrees at your home makes me want to cry.

    1. Oooh you bet! Can you believe I’d never tried pumpkin pie until a couple days ago?! What have I been missing out on? It’s delicious and I can’t stop having it for dessert. If only I could healthify it somehow… πŸ™‚

      Inverting the end pieces in a sandwich makes the sammie even better in my opinion – you get better texture and the same crisp. πŸ™‚ I avoided them as a kid as well, until my uncle who’s about 7 ft tall told me that it’s the end pieces that make him grow. Then after that, I’ve been all about end pieces! With no success in terms of growth πŸ˜‰

      8 degrees is considered warm in Waterloo from what I hear – with the wind chill in the winter, it gets up (err, down) to minus 40! Can you believe it? What is the temperature like where you live?
