One was topped with cashews, the other with chopped pecans. Sprinkled with black pepper, this was like my version of Matchstick’s white bean hummus toast!

  1. These summery lunches look amaaaaazing! I was drooling over the souffle omelet, corn quinoa and pretty much all of these meals! 😀 and sounds kinda weird but I wouldn’t mind having those spelt muffins for dinner either!

      Girl… muffins for dinner sounds like a dream come true! Like, almost as good as pancakes for dinner!

    1. Quark is a German cheese that is similar to cottage cheese, yogurt, ricotta cheese, and fromage frais. I use it like I would ricotta and yogurt. It’s a little sour and not as rich as other cheeses. I like it because it is very high in protein while being low in fat. 🙂 Tastes great in pancakes, on toast, with crackers, and with berries, in my opinion. I bought mine at the farmer’s market!
