Plain Pancakes + Healthy Topping Ideas

Here’s an easy recipe that I like to whip up when there are no bananas around. Some people don’t like the taste of banana in their baked goods, and if you’re one of those people, you’ll adore this recipe 🙂

Simple Pancakes


  • 1 egg
  • 1 scoop plain Greek yogurt (1/4 cup to 1/3 cup)
  • small splash of milk
  • a bit of mashed banana, grated apple, or pumpkin puree (optional)
  • 1/4 cup whole wheat flour
  • 1/4 cup spelt flour
  • lots of cinnamon, or as much as you’d like
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • flax and chia (optional)


  1. Whisk the wet ingredients together very well.
  2. Combine the dry ingredients and sift if desired.
  3. Pour the wet ingredients into the dry and combine.  Do not overmix or you will have tough pancakes 😦
  4. Let rest, covered in the fridge, for however long you’d like.
  5. Cook over medium-high heat and flip when bubbles appear.
  6. Serve with desired toppings and enjoy!

As you know, my favourite toppings are nut butter and maple syrup. 🙂

Here are some of my favourite topping ideas:

For creaminess, try…

  • butter or Earth Balance
  • peanut butter
  • almond butter
  • sunflower seed butter
  • Greek yogurt mixed with cinnamon and flax – see here
  • regular yogurt
  • chocolate chia pudding
  • coconut whipped cream (vegan) or regular whipped cream
  • pumpkin butter (I’m dying to try this!)
  • cream cheese
  • red bean paste – try it! So yummy.
  • Nutella
  • sour cream
  • custard
  • lemon curd
  • ricotta cheese
  • jam
  • an EGG! This would be perfect on a savoury pancake – try it with cheese, too.

For a bit of sweetness, try…

  • banana slices
  • chopped strawberries
  • blueberries, blackberries, or raspberries
  • dried fruit
  • chocolate chips! My fave ❤
  • cinnamon! It really enhances sweetness.

For amazing texture, add…

  • crushed nuts (pecans are my favourite!)
  • cashews
  • chia seeds
  • granola
  • shredded coconut
  • flaxseeds
  • hemp seeds

Lastly, drizzle some…

  • honey
  • maple syrup
  • powdered sugar? I’m not a powdered sugar gal but my dad LOVES it on his pancakes!
  • nut butter mixed with milk to make it drizzle-able: this will increase the volume of your nut butter and make it more bang for your caloric buck 🙂
