Pesto is so delicious in grilled cheese, like I have here with grated cheddar and whole wheat bread, cooked over medium heat with Earth Balance. So good, and 10x better than regular grilled cheese! This was a really yummy, but still pretty light, lunch.
Check out this healthy dinner – quinoa stir-fried with vegetables like zucchini, corn, mushrooms, and spinach, topped with parmesan and a fried egg.

Kinda too thick (shouldn’t have doubled up on the banana here), but this sandwich was just as delicious. I love almond butter with bananas and cinnamon!
Do you like grilled sandwiches? I like them best when the bread is crispy outside but still chewy and soft on the inside. This sammie got pressed too thin because of the double banana filling, so the bread was a bit thin. Still delish!
Pesto really made this lunch, too. Leftover quinoa saute topped with another fried egg, parmesan cheese, and pesto!
You know how much I LOVE runny egg yolks!
Dinner another day featured beef stir-fry, hard boiled eggs, and edamame. Huge protein here!

Then I enjoyed an almond butter toast with banana slices and hemp hearts. The perfect pre-hospital snack. It has enough protein to keep me full, as well as carbs to give me energy while running around the unit.
