I’ve got lots of Mom Meals to share with y’all today, starting with this:
Vegetable fried rice, roasted broccoli and cauliflower, and green curry eggplants.
Really yummy, actually! I had way more than this plate because the rice with curry sauce, and the roasted veggies, were so darn addictive.
Oh! And I started the meal off with this bowl of miso soup with tofu, onions, and scallions. My mom also puts potatoes in miso soup to make it creamier (…?) but I couldn’t tell.
The next day we devoured this dinner together: steamed broccoli and ‘jian ou bing’, made of ground meat, scallions, rice, and grated lotus root.
I topped my veggies with scallion oil because it’s super delicious on tender broccoli. This dinner was great! I loved the crispy rice bits.
Fried rice is always a winner! My favourite fried rice combination includes eggs, scallions, and sweet corn. 🙂 Everything else is a bonus.
Served with a bowl of steamed broccoli with more scallion oil and sesame seeds.
Loaded with quinoa and black beans, plus sweet corn and deliciously charred scallions. This bowl rocked!
Dessert was carrot cake. This carrot cake isn’t the best because it’s a bit greasy and dense, but I’m working on the recipe. Hopefully I’ll be able to share a better carrot cake recipe with you in the future!
Still, this was pretty darn yummy. I could eat anything (rotten plums, my binder, old shoes) if they were covered in cream cheese frosting. 😉
