Day in the Life

Most of the time, I start my day with a big bowl of oatmeal. It always fills me up, it’s quick and easy to make, plus it tastes SO delicious.

This bowl was topped with sliced banana, banana muffin, pecan pieces, peanut butter (!!), maple syrup, and honey Greek yogurt.

Lunch is an eggy vegetable scramble.

I had two eggs with steamed asparagus, sauteed zucchini, spinach, mushrooms, and scallions. 🙂 Topped with goat cheese to make it 105% delicious. This protein and fiber rich lunch kept me full all afternoon, and it would be even yummier with a slice of whole wheat toast.

Dinner here is enchiladas! Filled with black beans, shredded chicken, and leftover cooked beef from taco night. Not quite the ordinary Mom Dinner.  This was covered in white cheddar cheese from Costco. I loved the creamy corn tortillas. Mexican food is the best!

And baked until the cheese was melty and bubbling, served with roasted broccoli and cauliflower, guacamole, and salsa. This was the enchilada sauce we used, by the way!

So, so, so good! I pop broccoli after broccoli like it’s candy. If you don’t like broccoli, you MUST try it roasted. They really are better than French fries!

My plate had some of everything. I had seconds on the enchiladas, too! This one was filled with beans and chicken.

Smashed avocado with lemon, S + P is the best with spicy salsa. 🙂
