Au Revoir, BC!

Bonjour, tout le monde!

It’s now 6:33 in the morning, and it’s been the most interesting morning of my summer so far! I woke up at 4 AM to the sound of rain, and it was so HOT in my room. I kicked off all of the blankets and listened to the rain, rolling around on my bed, for an hour. Then, I went to the bathroom and returned to bed. I just could NOT sleep! I decided to skate (practice is at 7:00 AM) and I went downstairs. To my surprise, both Mom and Grandma were awake! My mom told me not to go skating, and then we cooked a meal for Grandma at 6 AM!

Grandma is staying at our house because of her insomnia. Apparently she can’t sleep for the whole night when Grandpa talks to her after 5:00 pm. My grandma is so cute. 😉 So Mom and I just cooked Grandma’s breakfast – rib stew with carrots and chickpeas, sautéed vegetables and cloud ear fungus, steamed peanuts with soy sauce and star anise, soup, plus garlic bread. Grandma likes hot, savoury breakfasts that are more “lunchlike” or “dinnerlike”. Breakfast foods (oats, yogurt, fruit, eggs, etc.) don’t fill her up. Also, Grammy eats two big meals a day, one EARLY in the morning. She loved what we cooked!

In other news, I’m leaving for Montreal TOMORROW morning! EEEE! I’ve told you all about my trip in recent posts, so I’m sorry if I repeat anything! I’ll be meeting the other teens at the airport at 10:40, and then the flight goes at about 12:30. I need to finish up my packing tonight before I say goodbye to beautiful British Columbia. 🙂

In other OTHER news, food! Let’s start with dessert: raspberries and crumbled muffin over yogurt. Yummaaay.

Fried trout dinner with curried tofu and broccoli. Really delicious dinner.

Deconstructed cherry oatmeal. Usually I stir it all together, but here I put them in separate thirds. More fun to eat! I love stirring flax into yogurt. It’s so delicious. 🙂 And OMG – organic cherries. The best!

Amazing Mom Dinner!

This din had everything: grilled asparagus, roasted zucchini and broccoli, rosemary potatoes just like last time, and egg fried rice. Oh! And my favourite part – curried chicken drumsticks and brown rice with all of the spicy curry drippings. I am going to miss Mom Meals SO much! 😥

I am so strange because I love having scrambled eggs for lunch. Made with two eggs, some cubed cheddar, and lots of fresh black pepper. Low and slow is the way to go – these eggies were so creamy and rich.

Another easy Mom Dinner – this one featured tomato scrambled eggs with edamame and dou gan (firm tofu) sautéed with chives from our backyard. Served on top of some fluffy quinoa. A meat-free but protein-rich dinner.

Simple ravioli dinner. This was spinach and ricotta ravioli topped with crumbled goat cheese. Small, but I wasn’t very hungry.

I haven’t had pancakes for a while! These were made with a big, super-ripe banana and lots of healthy seeds (flax, chia). Delicious topped with nut butter and lots of fresh berries.

Pancakes are so photogenic! I always have a hard time choosing which pictures to post because I usually end up taking too many photos. Pancakes look great from every angle, I think. 🙂

Mommy dinner of beef stew with carrots and tomato. Sadly this dish was not very flavourful. Mom now cooks in a Crock-Pot, so she always overestimates the amount of water she needs to put in. So we get watery beef. On the side that is a veggie stir-fry with mushrooms, peppers, and snap peas. Not bad! An okay Mom Dinner because I prefer thinly sliced beef stir-fried rather than stewed.

Do I see more pancakes?! Yep… they’re too good to resist! Simple banana p-cakes topped with 3 different nut butters, a drizzle of honey, plus mixed berries. Pancakes are beautiful, delicious, AND filling. You can make them as healthy/unhealthy as you want. What’s not to love?!

Mediocre lunch – tuna salad with peppers turned into a tuna melt. That’s cheddar and black pepper on top. Focaccia bread really does work for everything! I usually use it for egg + cheese + avocado, but this worked great.

Another party-like dinner with lots of roasted things – asparagus, butternut, rosemary potatoes and curried cauliflower with peas. That’s a rotisserie chicken thigh straight from the Costco store-bought chicken. It’s super tender and really, really juicy. I ALWAYS choose thighs over breasts because of the flavor and texture.

Peanut butter, banana, honey, and cinnamon on organic whole-wheat bread. This was to die for! Seriously. I want one now. 😛
