Packin’ and Snackin’

Hello hi hi! I am writing this {very very slowly} on my laptop. The keys are tiny and I am used to having a mouse, so this blog post will probably take me twice as long as usual! But that’s okay because I need to practice. I will be taking this laptop with me to Montreal in four days!

This was my weekend in food. Pretty awesome weekend!


This was a great week for food in my family – we went to Whole Foods earlier in the week. This sandwich was made with multigrain bread from WF, grilled on a skillet with a thin layer of avocado and lots of grated sharp white cheddar. Mmm! The perfect satisfying lunch for me!

A fantastic and VERY photogenic dinner by Mom. We have “teriyaki” chicken stir-fry with asparagus and bell peppers, plus some sauteed sesame gai lan and brown rice. I loved this dinner! The asparagus was especially yummy. 🙂

Oaty-oat oatmeal. This was a pretty interesting bowl of oats. I cooked them plain, in water, and then let that cool slightly before stirring in a big scoop of honey Greek yogurt (so that it wouldn’t separate – curdle) and topping it with peanut butter, crumbled banana chocolate chip muffin, and sliced banana. I really liked this, especially the bites with muffin and PB.

This is what most of Seline’s breakfasts look like. Seline’s my sister, if you didn’t know that already; she prefers savoury breakfasts. Here, I made her an omelette with mushrooms and cheddar, plus some bacon and a slice of toast. She doesn’t like butter, nut butter, or jam, or ANYTHING on her toast, so she’s having it plain! I could NOT do that.


Starbucks with Mom! Light caramel frappuccino with no whipped cream for me, and a great caramel macchiato for Mom. We’re both cararmel-lovers! My skinny frappuccino (nonfat milk) was a little watery, which I didn’t like, but Mom’s coffee was flavourful and I loved the sweet foam. We don’t have Starbucks very often!


Obviously I can’t get enough of this sandwich! Creamy avocado, tangy cheddar cheese, and crispy toast is OMG-good. I could eat this every day! Hot sandwiches are my favourite lunch, and I don’t really like cold lunches like wraps and, well, cold sandwiches. Totally looks like I recycled the pics from above, but I swear this was on two different days! Well… you know I love my avocados with cheese!

Winner, winner fried rice dinner. Shrimp and egg fried rice with bell peppers and frozen mixed vegetables, to be exact!

Oatmeal! You know it’s my love. 🙂 Here, I top plain oats with crumbled blueberry bran muffin and nut butter, as usual! This muffin is one of the best I’ve ever had! SO creamy, branny and wheat-y. 😉

Would you believe that I demolished all of this?! I think the best part of this hot bar lunch was the coconut rice with raisins (incredible!) and the Argentenian beef stew. There was also an Ecuadorian pork stew with passionfruit. OMG, SO creamy and luscious. I loved it!

Especially when they’re SWEET! This one was stuffed with sliced banana, crunchy peanut butter, a drizzle of honey, and big pinches of cinnamon. Cooked in coconut oil, this sandwich was totally perfection. Crispy crust and toasty outsides –> creamy and rich middle. Yummm.

Cute and classic Mom dinner: beef with asparagus and carrots plus roasted cinnamon-maple butternut squash on brown rice. Tasty! I sure will miss these Mom dinners when I am in Montreal.

Another ultimate Mom party meal! I mentioned on this day that I had to help Mom prepare dinner, and that’s because we had a special guest – Mom’s old friend from high school. We prepared Caesar salad with homemade dressing (SO good, I had seconds – loved the croutons), maple + cinnamon-roasted butternut squash, rosemary roasted potatoes, baked maple-soy trout, and brown rice. Seconds on the squash and the salad!! Divine meal – I was so stuffed after this.

That’s going to be it for now because I have another post coming right up tomorrow! I have to get packing because the flight is in 36 hours… whoa!
