I’ll just say it…

Every single one of my photos have disappeared.

When I found out that my WordPress blog would not let me post any more photos until I got rid of some of them, I deleted them ALL. Now, if you look back on my old posts, you won’t see a single picture.

Why don’t you just post them back on?

I can’t. I’ve also deleted each and every photo from my computer, erasing it from my files completely.

You will just have to wait until I get over this tragedy until I post again. 😦

♥ Mother’s Day + Homemade Pizza!

Dear mothers everywhere, I wish you all a Happy Mother’s Day!
I know that my mom is the most amazing mother I could have. Not only is she a strong and protective bear, she’s also a kind and loving bunny rabbit… who eats like a bird. Did I tell you that she eats toast + coconut oil + flax every morning for breakfast? Either that or a steamed sweet potato… with coconut oil and flax. 😉
Mom also drinks juice every morning – carrots + RAW potatoes + an apple. Every morning! She swears it keeps her “regular“. Once in a while (maybe every two months?) we’ll share a batch of oatmeal. She likes it, too!
I remember that I once asked my mom why there wasn’t a Children’s Day – and she told me that every day is Children’s Day! *she’s mopping right now – point proven.*
It’s true. Mom works so hard, day after day after day, to keep my sister and I healthy and happy. She works 24 hours a day, every day of the week. She cooks and cleans and scrubs and dusts and listens to me complain. She drives me to school and back, to volunteer and back, and to work and back. She buys me whatever I want need, whether that’s yoga pants or frozen yogurt from Qoola. She would rather buy organic berries for me, and eat more budget-friendly foods herself (see above – potato carrot apple juice). Plus, she’s not paid a single cent!

I love my mom.
She flips the best pancakes. Yeah, all of those beautiful p-cakes you see? My mommy flipped them. I’m so proud of her. The pancakes that I flip – they splat all over the skillet!
She washes my dishes every morning while I run upstairs to change my clothes and brush my teeth. I don’t know what I would do without her… probably be late for school every day!
She supports me with my schoolwork. She can’t really teach me Advanced Biology, but she helps me find help from tutors.
Hello – she makes the best Mom Meals! This lady can single-handedly make 4 dishes in 15 minutes – no joke!
She taught me the importance of economizing. Save it if you can! $ $ $
She. Is. So. Generous. My mama is such a giving person. She always thinks of others before herself.
She eats salad greens with me! She prepares everything I need for my lunch in the morning, including a double batch of spinach/mixed greens. When I wake up, all I have to do is assemble. The greens I don’t eat = her lunch!
She is the best walking buddy. I love strollin’ around the block with my mommy. She is so much fun to talk to.
BTW, you can see a picture of her on this post. 🙂 I love going to Whole Foods with her on Pro-D Days – and sharing a big bowl of hot bar food with her.

While my whole family usually goes out for lunch on Sunday, we decided to invite them all over for an awesome home-cooked lunch. Grandma is our special guest. We’re cooking all of her faves. I will update you soon about this lunch later in the week.

May Showers

Hello! Happy Thursday. 🙂

Thankfully it’s almost Friday. I’m so tired from this whole week – math exams, Leadership project, speeches and essays to write, emails to answer… blah. The weather is just making it worse. It was sunny ALL of last week – I’m talkin’ tank top + sunscreen sunny – and then it poured all weekend. It’s still raining now. I can’t believe it’s already been May for a whole week, because the weather = February. Cold and drizzly!

Anyways – today’s post is going to be a goodie! I’m so excited to show you all of the yummy meals I’ve been having recently. Here we go!

Banana pancakes with berries on top.


As always, these healthy pancakes are topped with chia, four types of nut butter (!), and yogurt. Yogurt is like whipped cream in that it adds moisture to the meal, but it’s not so light and airy. You know? By the way, I’m making a whole new PAGE just for pancakes. You can see it here – it’s still under construction now. 😉


Sushi lunch with the family – my fave way to spend a Sunday.


I always make a tally of how many I eat – usually I’m done at 16-20 pieces, plus a little salad.


We had chocolate brownie for dessert! Used the Trader Joe’s brownie mix. It was SO easy to whisk it up with a cup of plain yogurt and bake. Done!

Dinner was maple-soy salmon, just like last time. Onion scrambled eggs on the side, and also some baked burned baked butternut squash.


Lunch salad the next day featured leftover baked trout and butternut squash.

Honey mustard dressing – olive oil, mustard, honey, salt, and peppah. Honey-roasted pecans to sprinkle on top. 🙂


Dinner is egg + scallion noodles with some baby spinach. All swimmin’ in chicken broth. I love runny eggs in soup! There’s also some bok choy in here. Dinner for one is good, but I still like my Mom Meals!


Another salad! This one stars mixed greens, carrots, and radishes. My mom cut the radishes pretty thickly, so I didn’t have a good first impression! I honestly thought they tasted like dirt. AKA not good. BTW, that’s cubed papaya on the right. It was not good! Sort of powdery and mealy. I didn’t finish them.


Dressing was simple: EVOO, balsamic vinegar, salt, pepper, a little blob (I just wrote blog) of Dijon mustard, and honey. Quick and easy, but totally delish. The addition of honey is awesome. Goat cheese, TJ’s toasted almonds, and berries on top. These salads get all jumbled up in my backpack, so when I eat them at lunch they’re already dressed in melty goat cheese. :mrgreen:


Oatmeal! Plain ‘ole oats topped with sliced banana and berries. LOVE fresh berries on oatmeal. That’s a big spoonful of almond butter on the left, and a drizzle of maple on top. Check out that landscape!



And the grand finale…




Coconut chicken curry is my absolute fave, as I’ve gushed about here and here. This time, we added pretty much every vegetable in the fridge, plus butternut squash (melted into the sauce – put it in too early!) and cubed chicken breast. Fluffy, coconut-infused jasmine rice on the bottom. I just had dinner, but I would kill for a bowl of this right now. Mmmm!




And thirds. 😛


Obviously I hated my dinner. 😉

Food Court Lunch

You know when you’ve been walking around at the mall, and your tummy grumbles? Uh oh. It gets worse. Everyone agrees that it’s time for lunch, and before you know it – you’re headed for the food court. AKA Grease City.

What can ‘ya do? You COULD get a breakfast sammie, donut, and cappuccino. Delicious, but maybe not so waistline-friendly.

You could order a salad. It might be the lowest-calorie choice, but I just don’t find salads too appealing.

Enter U-Grill. U-Grill, at my local mall, is THE most popular food court “restaurant”.


You get to choose whichever vegetables + proteins you want, and have it stir-fried in front of your eyes and plopped on top of fresh, fluffy rice. You can also choose a sauce – selections range from black bean to chili garlic to Korean barbeque.

I ALWAYS choose teriyaki sauce. My sis prefers teriyaki sauce with a scoop of garlic sauce. Both are great!


Here, I chose mushrooms, broccoli, cauliflower, carrots, baby corn, red and green peppers, and onions. My proteins include teriyaki chicken, beef, shrimp, tofu, and peanuts. Along with some chow mein noodles. I also add some pineapple! I swear that pineapple, peanuts and shrimp MAKE this stir-fry. You can’t replicate those fabulous Thai flavours any way else.


Fantastic! Everything gets all charred, smoky, and every bite is saucy and yummy. The teriyaki sauce seeps into the rice, and it’s just amazing. Sprinkled with pepper and sesame!


You know me – I can’t go without dessert!

Qoola, which is now selling organic yogurt – eeeee!, is our go-to froyo place. It has everything from plain ‘ole chocolate/vanilla to peanut butter to cake batter. My faves include cookies and cream (amazing, but I wish it had some real cookie bits) and cheesecake.


The best toppings are little cheesecake cubes (my absolute favourite topping), BUTTERFINGERS (holy yum), walnuts, sliced almonds, granola (yay!), yogurt pretzels, and brownie. Devoured.


What am I doing? Isn’t this a healthy living blog?

Yeah… but meals like this keep me mentally healthy. 🙂

My Spring Slump + Many Meals!

I don’t know about you, but the warmer weather is making me feel super lethargic. We hit 28 degrees two days ago – which is practically a record high here in Vancouver – and I’ve been at a record low in terms of productivity. That’s why I shared my goals of the week on a post last weekend.

So… let’s take a look at how I’ve done with my goals!

1) Write one SAT practice test and finish both essays. Not at all. I wrote one PART of a practice SAT – which took 20 minutes – other than that, nada.

2) Start glueing (gluing?) stuff to my Leadership project. No more procrastinating! Still procrastinating. How my poster looked last week = how it looks this week. 😦

3) Skate once or twice Not. Even. Once. I don’t want to, but I know I should, and I sort of actually want to go, but then I hate going at the same time. Talk about a love-hate relationship! I just couldn’t will myself to wake up at 5:00 am for skating this week.

4) Bake something yummers This, however, I did do! I made a cranberry-orange yogurt cake, following the recipe that I talk about here. Updates + recipe coming!

5) Think of a Science Fair idea! I don’t have an exact idea yet, but I talked to my Bio teacher and I think I have a pretty solid idea of what I want to focus on. It has to do with vitamin C and different produce! 🙂

6) Go for a run – come on, just one? Did one, with my dog!

7) Eat salads every day. Bring leftover dinner dishes on top of mixed greens and bring dressing on the side. Yes! Totally accomplished this one. One of my favourite combinations was goat cheese + berries + honey-roasted pecans with sweet balsamic dressing. Mmmm! Another highlight meal was coconut chicken curry, which I talked about here. You can see my recipe on this post!

8) Finish all French re-dos and hand them in. Yep! Done and done and done. Woohoo!

9) Do math mindmap after each lesson. Sort of did this one. There isn’t much to trig identities aside from the, uh, identities, which took five minutes to copy down.

10) Be nice to everyone, arrive at work early, and volunteer. This isn’t really measureable, but I’m sure I was. 😉

★ Eat until full and then STOP. Accomplished this maybe 80% of the time? Good for me!


Anyways, here are some of my eats lately!


Pineapple pancakes for breakfast. Used the regular healthy pancake substitutions, and added chopped pineapple to the batter.

I spread coconut yogurt between each pancake for extra moistness, but it seeped out onto the plate, and all they ended up doing was cool down the pancakes. Dang! I like my p-cakes pipin’ hawt.

Drizzled with cinnamon-honey, this was good.
Not amazing, not incredible, just okay.
Pineapples are far from being my fave fruit! 😦

I like eating pancakes better when they are spread out all over my plate, rather than having them in a stack. When they’re stacked up, they’re gone too quickly! Pancakes are so much better when they are all spread out and topped with nut butter, chia, coconut, berries, and creamy Greek yogurt. This breakfast, although it was equal in size and calories as my other breakfasts, just felt too small.


Lunchy lunch lunch! Check out this wicked scrambled egg + Laughing cow + avocado open-face sandwich. Remember my cheesy egg and avocado toast? This is pretty much the same thing… with much better photos. 🙂

So delicious. Creamy eggs, tangy cheese, mellow avocado, and herby bread. Topped with a sprinkle of black pepper, this is just heavenly!

Crispy bread = love. These three layers are perfection, I tell you!


What do we have here… SNACKTIME!


Greek yogurt topped with crumbled muffin and berries.

Sprinkled with chia seeds and coconut.

So yummy! This was a big snack-o and I loved it. Based on this customizable recipe that I just can’t get enough of! Seriously, it takes three minutes MAX to whip up.


Dinner – quinoa (mmmm, haven’t had quinoa in so long!) topped with basa and snap pea + carrot + onion stir-fry with carrots and onions. Chive scrambled eggs on the side. These are mouthwateringly good!

Another fabulous Mom Meal.


Dessert! I think I mentioned this before, but I can’t find the post. This is a Chinese rice cake. I wish I snapped some pics of this baby fresh outta the oven – it looked amazing, and smelled even better!


This is filled with sweet and creamy red bean paste, toasty sliced almonds, dates, and deliciously fragrant black sesame. The crackly, crispy edges are the best. This is like a Chinese brownie! Yum.


I apologize for the lack of funny stories and little anecdotes! I’ve definitely been out and about lately, getting my first-aid certificiation (yay! 8:00-5:00 today, SO worth it), running errands with Mom, and all that jazz. Obviously I don’t have a ton of time to describe every meal and give recipes – in fact, my mom is nagging me right now to finish math homework.

It’s 10:15, Saturday night – typical Mom. 🙂

Braised Ribs + Broccoli + Egg Dinner

Good, good mornin’ everyone!

Can you believe I JUST finished my first green smoothie two minutes ago? It was delicious – definitely a repeater. 🙂 Thanks, IGE! I will update you all soon about my first greeeeen-drink experience!

How did I manage to stray from my daily bowl of oats? Blame my orthodontist. My braces are making my teeth REALLY sore! 😦

What do we have here?

I see a fried egg and a broccoli + scallop + onion saute.

Some fluffy jasmine rice and braised ribs with carrots, dou-gan (firm tofu), baby shiitake mushrooms, and daikon.

What a yummy and filling meal. I love how it looks covered in sesame seeds. It also adds so much flavour!
